Ingredients
For Chicken Marination
1 kg Whole chicken, cut into large pieces, चिकन
1 ⅓ cups Curd, beaten, दही
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 ½ tsp Turmeric powder, हल्दी पाउडर
1 heaped tbsp Coriander powder, धनिया पाउडर
1 tsp Garam masala powder, गरम मसाला पाउडर
½ tsp Cumin powder, जीरा पाउडर
Salt to taste, नमक स्वादअनुसार
1 tsp Lemon juice, नींबू का रस
1 tbsp Oil, तेल
2-3 tbsp Fried onions (optional) तले हुए प्याज
For Cooker Wala Chicken
3-4 tbsp Mustard oil, सरसों का तेल
2-3 tbsp Oil, तेल
2 no. Black cardamom, बड़ी इलायची
3 no. Green cardamom, हरी इलायची
1 no. Bay leaf, तेज पत्ता
¼ inch Cinnamon stick, दालचीनी
9-10 no. Garlic cloves, लहसुन
2 ½ large Onions, roughly chopped, प्याज
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
1 inch Ginger (peeled & finely chopped) अदरक
1 ½ tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
2 large Tomatoes, roughly chopped, टमाटर
Marinated Chicken, मैरीनेटेड चिकन
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
½ tbsp Ghee, घी
½ tbsp Prepared Masala, तयार किया हुआ मसाला
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
1 no. Green chili (less spicy & slit into half) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar, चीनी
For Masala
2 tbsp Black peppercorns, काली मिर्च के दाने
3-4 no. Cloves, लौंग
4-5 no. Black cardamom, बड़ी इलायची
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
- In a bowl, add chicken, curd, degi red chili powder, turmeric powder, coriander powder, garam masala powder, cumin powder, salt to taste, lemon juice, fried onions and mix it well.
- Keep it aside to marinate for 30-40 minutes.
For Cooker Wala Chicken
- In a cooker, add mustard oil, oil, once it’s hot, add black cardamom, green cardamom, bay leaf, cinnamon stick and let it splutter.
- Add garlic cloves, onion and saute it until golden in color.
- Add turmeric powder, degi red chili powder, coriander powder and mix it well.
- Add ginger, tender coriander stems and saute it for a minute.
- Add tomato, cover it with a lid and cook it for 2-3 whistles until cooked well.
- Mash it with the help of a masher and cook it for a while.
- Add marinated chicken, water and get a quick boil.
- Add salt to taste, ghee, prepared masala, coriander leaves and green chili.
- Cover it with a lid and cook it for 4-5 whistles until cooked well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
For Masala
- In a bowl, add black pepper, cloves, black cardamom and salt to taste.
- Transfer it to a mixer grinder jar and grind it smoothly.
- Keep it aside for further use.
