Nagori Dal Tadka ढाबे वाली नागोरी दाल तड़का Dhaba style Jowar Khichdi Bonus Recipe
Ingredients
For Washing & Soaking Jowar
2 cups Jowar, ज्वार
Water as required, पानी
For Soaking & Cooking Dal
1 ½ cup Akkha Masoor, अक्खा मसूर
1 cup Toor Dal, तूर दाल
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
For Nagori Dal
⅓ cup Oil, तेल
1 heaped tbsp Ghee, घी
3 no. dry Red chillies, सूखी लाल मिर्च
¼ tsp Asafoetida, हींग
1 ½ inch Ginger (peeled & roughly chopped) अदरक
5-6 no. Garlic cloves, chopped, लहसुन
3 no. large Onions, chopped, प्याज
1 no. Green chilli (less spicy & chopped) हरी मिर्च
2-3 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
2 tsp Turmeric powder, हल्दी पाउडर
2 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 no. large Tomatoes, chopped, टमाटर
Soaked fenugreek leaves, भीगी हुई कसूरी मेथी
1 cup Water, पानी
Cooked Dal, पकी हुई दाल
2 tbsp Jaggery, roughly chopped, गुड़
Salt to taste, नमक स्वादअनुसार
For Soaking Fenugreek Leaves
¼ cup dry Fenugreek leaves, कसूरी मेथी
1 ½ cup Water, पानी
For Jowar Khichdi
2-3 heaped tbsp Ghee, घी
A pinch of small Mustard seeds, छोटी राई
½ tsp Fennel seeds, सौंफ
½ tsp Cumin seeds, जीरा
Prepared Jowar powder, तयार किया हुआ ज्वार का पाउडर
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
2 cups Water, पानी
For Frying Chillies
2 heaped tbsp Ghee, घी
5-6 no. dry Red chillies, सूखी लाल मिर्च
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Garnish
Fried chili, तली हुई मिर्च
Ghee, घी
Coriander sprig, धनिया पत्ता
Process
For Washing & Soaking Jowar
- In a bowl, add jowar, water and wash it well.
- Add water and keep it aside to soak for 10-15 minutes.
- Strain the jowar, transfer it to a mixer grinder jar and grind it coarsely.
- Keep it aside for further use.
For Soaking & Cooking Dal
- In a bowl, add Akkha masoor, toor dal, water and wash it well.
- Add water and keep it aside to soak for 5-10 minutes.
- In a pressure cooker, add soaked dal, water, salt to taste, cover it with a lid and cook it until 2-3 whistles.
- Keep it aside to cool down at room temperature.
For Nagori Dal
- In an earthen pot or handi, add oil, ghee, once it’s hot, add dry red chillies, asafoetida, ginger, garlic, onion and saute it well until translucent.
- Add green chillies, tender coriander stems and saute for a minute.
- Add turmeric powder, degi red chili powder, tomatoes, soaked dry fenugreek leaves and cook for a while on medium flame.
- Add water, cook dal and let it simmer for 15-20 minutes on low flames.
- Add jaggery, salt to taste and give it a quick boil.
- Transfer it to a serving bowl or dish, garnish it with fried chili and coriander sprig.
- Serve hot with prepared jowar khichdi and fried chili.
For Jowar Khichdi
- In a pressure cooker, add ghee, once it’s hot, add jowar, salt to taste, water and stir well.
- Cover it with a lid and cook it until 2-3 whistles until cooked well.
- Transfer it to a serving bowl or dish, garnish it with fried chili and coriander sprig.
- Serve hot with prepared dal and fried chili.
For Soaking Fenugreek Leaves
- In a bowl, add dry fenugreek leaves, add water and soak it for 10-15 minutes.
- Keep it aside for future use.
For Frying Chili
- In a pan, add ghee, once it’s hot, add dry red chillies and fry it for a minute.
- Add degi red chili powder, turn off the flames and mix it well.
- Keep it aside for further use.
