
Ingredients
2-3 tbsp Ghee (घी)
1 tsp Cumin Seeds (जीरा)
½ tsp Fennel Seeds (सौंफ)
¼ tsp Asafoetida (हींग)
3-4 Garlic – chopped (लेसन)
1 inch Ginger – chopped (अदरक)
3 fresh Green Chillies – chopped (हरी मिर्च)
2 medium Onion – sliced (प्याज़)
Salt to taste (नमक स्वादानुसार)
½ tsp Turmeric Powder (हल्दी पाउडर)
½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
1 tsp Coriander Powder (धनिया पाउडर)
3 Ridge Gourd (Turai) – sliced (तुरई)
Water (पानी)
2 medium Tomatoes – chopped (टमाटर)
3 tbsp Coriander Leaves – chopped (धनिया पत्ता)
For Garnish
fresh Coriander Leaves (धनिया पत्ता)
Process
- In a kadai heat ghee and add cumin seeds, fennel seeds, asafoetida, ginger, garlic, green chillies and saute for a few seconds.
- Now add onion saute until light brown then add salt, turmeric powder, degi red chilli powder, coriander powder and saute them until fragrant.
- Then add the ridge gourd (turai) and saute it for a minute now add some water then cover and cook for 6-8 minutes.
- Remove the lid and stir it once then add the tomatoes and cook for another minute.
- Now finally add coriander leaves and give it a final mix.
- Serve hot in a serving bowl and garnish with coriander leaves
It turned out to be 😋.
I used to cook the similar way but never added ginger garlic.
