Ingredients

For Chicken Masala

12-15 Black peppercorns, काली मिर्च के दाने

1 Mace, जावित्री

1 tsp Cumin seeds, जीरा

1 tbsp Coriander seeds, धनिया की बीज

2 Cloves, लॉन्ग

4-5 Green cardamom, हरी इलायची

1 Black cardamom, बड़ी इलायची

Salt to taste, नमक स्वादानुसार

 

For Marinating Chicken

1 whole Chicken, (cut into big pieces), चिकन

Salt to taste, नमक स्वादानुसार

1 heaped tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 ½ heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

½ Lemon juice, नींबू का रस

1 tsp Oil, तेल

 

For Tempering

2 tbsp Ghee, घी

2 tbsp Oil, तेल

1 tsp Cumin seeds, जीरा

3 medium size Onion, chopped, प्याज

Marinated chicken, मैरिनेटेड चिकन

2 Green chilli, slit, हरी मिर्च

Few Mint leaves, पुदीने के पत्ते

Salt to taste, नमक स्वादानुसार

1 heaped tbsp Coriander powder, धनिया पाउडर

1 tsp Turmeric powder,  हल्दी पाउडर

1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर

¼ cup Water, पानी

½ cup fresh Tomato puree, ताज़े टमाटर की प्यूरी

½ cup Water,  पानी

2 tsp Prepared chicken masala, तैयार किया हुआ मसाला

1 tsp Kasuri methi, crushed, कसूरी मेथी

 

For Garnish

fresh Coriander sprig, धनिया पत्ता

Process

For Chicken Masala

  • In a pan, add black peppercorns, mace, cumin seeds, coriander seeds.
  • Add cloves, green cardamom, black cardamom, salt to taste.
  • Dry roast on low flame until the spices turn aromatic.
  • Transfer it into a grinder jar and grind into a fine powder. Keep it aside for further use.

 

For Marinating Chicken

  • In a bowl, add chicken pieces, salt to taste, ginger garlic paste.
  • Add degi red chilli powder, lemon juice and oil.
  • Marinate everything well and keep it for 10-15 minutes.

 

For Tempering

  • In a heavy bottom pot, add ghee, oil onces it’s hot and add cumin seeds, let it splutter.
  • Add onion and saute on medium flame until translucent.
  • Add marinated chicken and cook for 5-10 minutes.
  • Add green chilli, mint leaves, salt to taste and saute it well.
  • Add coriander powder, turmeric powder, degi red chilli powder and saute it well.
  • Add little water while sauteing it.
  • Add fresh tomato puree, water and cover it with the lid and cook for atls 15-20 minutes on medium flame.
  • Add prepared chicken masala, kasuri methi and mix well.
  • Garnish it with coriander sprig and serve hot with roti.
