Roasted Vegetable & Tofu Panini भुनी हुई सब्जी और टोफू पाणिनी

Ingredients
- 100 gms bell pepper, cubes
- 100 gms eggplant, sliced
- 100 gms zucchini, sliced
- 100gms tofu, sliced
- 1 tbsp balsamic vinegar
- 1 tbsp garlic, chopped
- 1 tsp olive oil
- 1 tsp fresh thyme chopped
- Salt to taste
- ¼ tsp Fresh black pepper
- ½ cup chickpea hummus
- 2 tbsp sundried tomato paste
- 2no whole wheat Panini bread
Process
- Apply thyme, balsamic, olive oil, garlic to all the vegetables and tofu. Bake in preheated oven at 200*C for 10 mins each sides. Remove when done and allow it to cool.
- Mix hummus and sundried tomato paste and make spread for Panini. Cut Panini bread from the middle. Apply this spread on bread.
- Arrange vegetables on Panini bread and grill them in Panini machine or griller for 5 minutes each side.
- Remove and serve immediately.
