
Ingredients
For Cooking Mutton
1 ½ tbsp Oil, तेल
1 ½ tbsp Ghee, घी
4-5 medium Onions, sliced, प्याज
1 kg Mutton (with bones) मटन
Salt to taste, नमक स्वादअनुसार
Prepared Paste, तयार किया हुआ मिश्रान
2 tbsp Prepared Masala, तयार किया हुआ मसाला
1 ½ cups Water, पानी
For Paste
1 cup Curd, beaten, दही
10-12 no. Garlic cloves, लहसुन
1 inch Ginger (peeled & roughly sliced) अदरक
2-3 no. Green chillies (less spicy & broken in half) हरी मिर्च
2 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 ½ tbsp Coriander powder, धनिया पाउडर
For Masala
1 tbsp Black peppercorns, काली मिर्च के दाने
½ tbsp Coriander seeds, धनिये के बीज
4 no. Black cardamom, बड़ी इलायची
2-3 no. Cloves, लौंग
For Tadka
1 tbsp Oil, तेल
½ tbsp Ghee, घी
1 inch Ginger, julienne, अदरक
1 tbsp Tender Coriander stems, chopped, धनिया के डंठल
2-3 no. Green chillies (slit into half without seeds) हरी मिर्च
½ tsp Dry fenugreek leaves, optional, कसूरी मेथी
Cooked Mutton, पका हुआ मटन
1 tsp Prepared Masala, तयार किया हुआ मसाला
2-3 tbsp Coriander leaves, finely chopped, धनिया पत्ता
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Cooking Mutton
- In a cooker, add oil, ghee, once it’s hot, add onion and sauté it until golden in color.
- Add mutton and sauté it for 2-3 minutes on high flames.
- Add salt to taste, prepared paste and cook it for a while until tender on medium flames.
- Add prepared masala, water, cover it with a lid and cook it for 4-5 whistles until cooked well.
- Keep it aside for further use.
For Paste
- In a bowl, add curd, garlic clove, ginger, green chillies, degi red chili powder and coriander powder.
- Transfer it to a mixer grinder and make a smooth paste.
- Keep it aside for further use.
For Masala
- In a mortar pestle, add black peppercorns, Coriander seeds, black cardamom, cloves and grind it coarsely.
- Keep it aside for further use.
For Tadka
- In a kadai, heat oil, ghee, add ginger, coriander stems, green chillies, dry fenugreek leaves and sauté it for 2-3 minutes on medium flames.
- Add cooked mutton and let it simmer for a while until it thickens.
- Finish it with some prepared masala and coriander leaves.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
