
Ingredients
For Jackfruit Marination
1 kg Jackfruit (peeled & diced) कटहल
2 tbsp Mustard oil, सरसों का तेल
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 ½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
For Pressure Cook Jackfruit
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
2 no. Bay leaf, तेजपत्ता
2-4 Cloves, लौंग
Marinated Jackfruit, मैरिनेटेड कटहल
For Kathal Rara
⅓ cup Mustard oil, सरसों का तेल
1 tbsp Oil, तेल
2 no. Dry red chillies, सूखी लाल मिर्च
¼ tsp Fenugreek seeds, मेथी दाना
1 ½ tsp Cumin seeds, जीरा
1 tsp Fennel seeds, सौंफ
4-5 no. Black peppercorns, काली मिर्च के दाने
1 no. Bay leaf, तेजपत्ता
5 medium Onions, sliced, प्याज
2 no. Cloves, लौंग
1 tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Tender Coriander stem, chopped, धनिया का डंठल
2 no. Green chillies (less spicy & chopped) हरी मिर्च
¼ cup Curd, beaten, दही
½ cup fresh Tomato puree, ताजा टमाटर प्यूरी
1 cup Water, पानी
Fried jackfruit, pulled, तला हुआ कटहल
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
⅓ cup Water, पानी
Oil for frying, तेल तलने के लिए
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Jackfruit Marination
- Firstly, apply a generous amount of mustard oil on the hands, knife and on the chopping board.
- Cut the jackfruit from the middle into two halves. Remove the inner sticky white core of the jackfruit.
- Separate the pod from the skin of the jackfruit and cut them into cubes.
- Keep the chopped pod cubes in a parat, add mustard oil, degi red chili powder, turmeric powder, and salt to taste.
- Keep it aside for 20-25 minutes.
For Pressure Cook Jackfruit
- In a pressure cooker, add water, salt to taste, bay leaf, cloves, marinated jackfruit and cover it with the lid and cook it for 2-3 whistles or until tender.
- Keep it aside for further use.
For Kathal Rara
- In a handi, heat mustard oil, oil, add dry red chilies, fenugreek seeds, cumin seeds, fennel seeds, black peppercorns, bay leaf and let it splutter.
- Add onions, cloves and sauté it 3-4 minutes or until translucent.
- Add turmeric powder, degi red chili powder, coriander powder, ginger garlic paste and cook it for 2-3 minutes.
- Add coriander stems, green chili, add curd and cook it well.
- Add tomato puree, water and mix it well.
- Add jackfruit, salt to taste, sugar, water and simmer it for a while until cooked well.
- Transfer it to a serving bowl or dish and garnish it with coriander sprig.
- Serve hot with roti.
For Frying
- In a kadai, heat oil, add cooked jackfruit and fry until golden brown.
- Transfer it to a plate or tray and keep it aside for further use.
