Ingredients

For Cooking Chole

2 cups Chickpeas (soak overnight) छोले

1 inch Ginger (peeled & sliced) अदरक

2 no. dry Kashmiri red chili, सूखी कश्मीरी लाल मिर्च

2-3 no. Bay leaf, तेज पत्ता

1 inch Cinnamon stick, दालचीनी

Salt to taste, नमक स्वादअनुसार

3-4 cups Water, पानी

½ tsp Turmeric powder, हल्दी पाउडर

½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

2-3 tbsp Ghee, घी

 

For Masala

1 ½ tbsp Coriander seeds, धनिया के बीज

4-5 no. Black cardamom, बड़ी इलायची

1 heaped tbsp Black peppercorns, काली मिर्च के दाने

1 tsp Cumin seeds, जीरा

6-7 no. Cloves, लौंग

1 no. Mace, जावित्री

4-5 no. Green cardamom, हरी इलायची

¼ tsp Carom seeds, अजवायन

½ tsp Asafoetida, हींग

2-3 no. Bedgi red chili, बेड़गी लाल मिर्च

1 tbsp dry Pomegranate seeds, सूखे अनार के दाने

1 tbsp dry Fenugreek leaves, कसूरी मेथी

Salt to taste, नमक स्वादअनुसार

 

For Punjabi Chole

2 tbsp Oil, तेल

1 tbsp Ghee, घी

1 tsp Cumin seeds, जीरा

2-4 no. Garlic cloves, लहसुन

½ inch Ginger (peeled & chopped) अदरक

3-4 medium Onions, grated, प्याज

3-4 no. Green chillies (less spicy & finely chopped) हरी मिर्च

2 tbsp Tender Coriander stems, finely chopped, धनिया के डंठल

2 tbsp Prepared Masala, तयार किया हुआ मसाला

1 tsp Turmeric powder, हल्दी पाउडर

1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

2 cups Curd, beaten, दही

Cooked Chole, पके हुए छोले

Water as required, पानी

1 tbsp Coriander leaves, chopped, धनिया पत्ता

1 medium Tomato, diced, टमाटर

 

For Garnish

Coriander sprig, धनिया पत्ता

Process

For Cooking Chole

  • In a pressure cooker, add chickpeas, ginger, dry kashmiri red chillies, bay leaf, cinnamon stick, water, salt to taste, turmeric powder, degi red chili powder, ghee and mix it well.
  • Cover it with the lid and cook till 3-4 whistles.
  • Mash the 20% chickpeas with the help of a ladle and keep it aside for further use.

 

For Masala

  • In a pan, add coriander seeds, black cardamom, black peppercorns, cumin seeds, cloves, mace, green cardamom, carom seeds, asafoetida, bedgi red chili and dry roast them for 2-3 minutes.
  • Add dry pomegranate seeds, dry fenugreek leaves, salt to taste and toss it for a minute.
  • Transfer it to a mixer grinder jar and grind it into fine powder.
  • Keep it aside for further use.

 

For Punjabi Chole

  • In a kadai, add oil, ghee, once it’s hot, add cumin seeds and let it splutter.
  • Add garlic, ginger, onions and saute until golden in color.
  • Add green chillies, coriander stems, prepared masala and cook it for a while.
  • Add turmeric powder, degi red chili powder, curd and cook it well.
  • Add cooked chole, water, cover it with the lid and let it cook for 10-15 minutes on medium flames.
  • Finish it with coriander leaves, tomato and mix it well.
  • Transfer it to a serving bowl or dish and garnish it with coriander sprig.
  • Serve hot with puri or roti.
