Ingredients
For Dough
1 ½ cups Refined flour, मैदा
2-3 heaped tbsp Ghee, घी
A pinch of salt, नमक
½ tsp Baking soda, बेकिंग सोडा
⅓ cup Curd, beaten, दही
¼ cup Chilled water, ठंडा पानी
¼ cup Refined flour, मैदा
3-4 tbsp soften Butter, cubed, मक्खन
¼ cup Refined flour, मैदा
For Sugar Syrup
2 cups Sugar, चीनी
2 cups Water, पानी
few Saffron strands, केसर
¼ tsp Cardamom powder, इलायची पाउडर
5-6 no. Green cardamom pods, हरी इलायची
1 tsp Lemon juice, नींबू का रस
2 tbsp Saffron water, केसर का पानी
Other Ingredients
Oil for frying, तेल तलने के लिए
For Coating
Icing sugar & Saffron color, चीनी और केसर का रंग
Little Water, पानी
For Garnish
Almonds, sliver, बादाम
Pistachios (blanched & sliver) पिस्ता
Silver vark, चाँदी का वर्क
Process
For Dough
- In a parat, add refined flour, ghee and mix it well until it has a crumbly texture.
- Add a pinch of salt, a pinch of baking soda, curd, chilled water and knead a semi hard dough.
- Add softened butter and knead it in soft dough.
- Divide the dough into layers and keep it aside to rest for 15-20 minutes.
- Take a lemon size ball, make a cavity and give it a desired shape.
- Keep it aside for further use.
For Frying
- In a kadai, add oil, once it’s medium hot, add balushahi and fry for 10-12 minutes until golden in color.
- Transfer it to a prepared sugar syrup and let it soak for a while.
- Keep it aside for further use.
For Sugar Syrup
- In a kadai or sauce pot, add sugar, water, saffron strands, cardamom powder, green cardamom and cook for 15-20 minutes or until 1 string consistency.
- Add saffron water and mix it well.
- Keep it aside for further use.
For Coating
- In a bowl, add icing sugar, saffron color, water and mix it well.
- Sprinkle it on the balushahi and transfer it to a serving dish.
- Garnish it with almonds, pistachios and silver vark.
