Pepper Chicken काली मिर्च चिकन फ्राई spicy Chicken Curry चिकन काली मिर्च Recipe - Ranveer Brar

Ingredients

For Chicken Marination

1 kg Chicken leg (thighs & drumsticks) चिकन

2 heaped tbsp Black peppercorns, crushed, कुटी हुई काली मिर्च

5-6 sprig Curry leaves, करी पत्ते

Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट

2 tbsp Oil, तेल

 

For Ginger Garlic Paste

1 ½ inch Ginger (peeled & roughly chopped) अदरक

6-7 no. Garlic cloves, लहसुन

2-3 no. Green chillies (less spicy & roughly torn) हरी मिर्च

Salt to taste, नमक स्वादअनुसार

 

For Chicken Pepper Fry

⅓ cup Oil, तेल

2-3 sprig Curry leaves, करी पत्ते

4 no. medium Onions, chopped, प्याज

Salt to taste, नमक स्वादअनुसार

Marinated Chicken, मैरीनेटेड चिकन

1 ½ cups Curd, beaten, दही

2-3 tbsp Prepared masala, तयार किया हुआ मसाला

1-2 tsp Black pepper powder, काली मिर्च पाउडर

 

For Masala

½ tbsp Coriander seeds, धनिये के बीज

½ tbsp Cumin seeds, जीरा

2 tbsp Black peppercorns, काली मिर्च के दाने

6-7 no. Cloves, लौंग

10-12 no. Black cardamom, बड़ी इलायची

Salt to taste, नमक स्वादअनुसार

 

For Garnish

Coriander sprig, धनिया पत्ता

Lemon wedge, नींबू की फांक

Process

For Chicken Marination

  • In a bowl, add chicken, black peppercorns, curry leaves, prepared ginger garlic paste, oil and marinate well.
  • Keep it aside for further use.

 

For Ginger Garlic Paste

  • In a mortar pestle, add ginger, garlic, green chillies, salt to taste and grind it into the coarse paste.
  • Keep it aside for further use.

 

For Chicken Pepper Fry

  • In a handi, add oil, once it’s hot, add curry leaves, onions, salt to taste and cook well until it’s translucent.
  • Add marinated chicken and cook it for 7-8 minutes on medium flames.
  • Add curd, prepared masala and cook it all together for a while.
  • Once chicken gets cooked very well then add black pepper powder and mix it well.
  • Switch off the flames and transfer it into the serving dish or bowl.
  • Garnish it with coriander sprig and lemon wedge.
  • Serve hot with malabar paratha and roti.

 

For Masala

  • In a pan, add coriander seeds, cumin seeds, black peppercorns, cloves, black cardamom, salt to taste and roast for a while or until it’s aromatic.
  • Switch off the flames and transfer it into the mixer grinder jar and grind it into the smooth fine powder.
  • Keep it aside for further use.
