Ingredients
For Marination
800 gms Paneer, cut into large cube, पनीर
Salt to taste, नमक स्वादअनुसार
1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
2 heaped tbsp Curd, beaten, दही
1 tsp Oil, तेल
1 tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट
For Frying Onions
½ cup Oil, तेल
3 medium Onions, roughly sliced, प्याज
For Paste
Fried Onion, तले हुए प्याज
10-12 no. Cashewnut, काजू
1 tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Few Coriander stem with roots, धनिये के डंठल
4-5 no. Green cardamom, हरी इलायची
1 no. Mace, जावित्री
3-4 no. Garlic cloves, लहसुन
2 no. Green chillies, less spicy & broken into half, हरी मिर्च
For Frying Paneer
Remaining oil, बचा हुआ तेल
Marinated paneer, मैरिनेटेड पनीर
For Paneer Changezi
½ tsp Cumin seeds, जीरा
2 no Green cardamom, हरी इलायची
3 no Cloves, और लौंग
1 no. Bay leaf, तेज पत्ता
Remaining oil, बचा हुआ तेल
1 ¼ cup Tomato puree, ताज़े टमाटर की प्यूरी
½ cup Curd, beaten, दही
½ tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट
Prepared paste, तैयार किया हुआ पेस्ट
Salt to taste, नमक स्वादअनुसार
1 ½ cups Water, पानी
1 tbsp Fried onion oil, तले हुए प्याज का तेल
Fried paneer, तला हुआ पनीर
For Smoke
Coal, कोयला
2-3 no. Cloves, लौंग
1 tsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Chilli oil, मिर्च का तेल
Fried onion, तले हुए प्याज
Process
For Marination
- In a bowl, add paneer, salt to taste, degi red chili powder, coriander powder, curd, oil, ginger garlic paste and give a good mix.
- Keep it aside to marinate for a while.
For Frying Onions
- In a pan, add oil, once it’s hot, add onions and fry them until golden in colour.
- Transfer it to an absorbent sheet and keep it aside for further use.
For Paste
- In a bowl, add fried onions, cashewnuts, coriander powder, turmeric powder, degi red chili powder, coriander stems with roots, green cardamom, mace, garlic, green chillies and mix well.
- Transfer it to a mixer grinder jar and grind it into a smooth paste.
- Keep it aside for further use.
For Frying Paneer
- In a pan, add remaining oil, once it’s hot, add marinated paneer and shallow fry them on all sides until golden in colour.
- Transfer it to a tray and keep it aside for further use.
For Paneer Changezi
- In a handi, add cumin seeds, green cardamom & cloves, bay leaf, remaining oil and let it splutter on high flames.
- Add tomato puree, curd and saute it for 5-6 minutes until oil is separated.
- Add ginger garlic paste, prepared paste and cook it for a while.
- Add water to adjust the consistency and let it simmer for a while.
- Finish it with fried onion oil, fried paneer and cook it for 4-5 minutes on medium flames.
- Turn off the flames, place a small steel bowl into handi, add burnt coal in the steel bowl, add cloves, ghee, cover it with a lid and give smoke to the gravy for a while.
- Transfer it to a serving dish, garnish it with coriander sprig, chilli oil and fried onion.
- Serve hot with roti or naan.
