Ingredients

For Gravy

2 tbsp Ghee, घी

1 tbsp Oil, तेल

5-6 no. Garlic cloves, roughly chopped, लहसुन

3 medium Onions, sliced, प्याज

1 cup Curd, beaten, दही

1 no. Green chili (less spicy & cut into diagonally) हरी मिर्च

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 ½ tsp Coriander powder, धनिया पाउडर

½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर

2 tsp Turmeric powder, हल्दी पाउडर

Salt to taste, नमक स्वादअनुसार

½ cup Foxnuts, मखाने

10-12 no. Cashew nuts (soaked & cut into half) भीगे हुए काजू

1 cup Water, पानी

 

For Soaking Cashew Nut

Hot water as required, गरम पानी

10-12 no. Cashew Nuts, cut into half, काजू

 

For Frying Foxnuts

1-2 tbsp Ghee, घी

½ cup Foxnuts, मखाने

Salt to taste, नमक स्वादअनुसार

¼ tsp Degi red chili powder,  देगी लाल मिर्च पाउडर

 

For Kaju Makhane Wala Paneer

2 tbsp Ghee, घी

Prepared gravy, तैयार की हुई ग्रेवी

2-3 cups Water, पानी

1 tbsp Ghee, घी

800 gms Paneer, cut into medium size cubed, पनीर

Salt to taste, नमक स्वादअनुसार

1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल

12-15 no. Cashew nuts (soaked & cut into half) भीगे हुए काजू

1 tsp Sugar (optional) चीनी

 

For Garnish

Fried foxnuts, तले हुए मखाने

Fried cashew nuts, तले हुए काजू

Dry fenugreek leaves, crushed, कसूरी मेथी

Fresh cream, ताज़ा मलाई

Chili oil, मिर्च का तेल

Coriander sprig, धनिया पत्ता

Process

For Gravy

  • In a handi, add ghee, oil, once it’s hot, add garlic, onions and saute it for a while until translucent.
  • Add curd, green chili, ginger garlic paste, coriander powder, degi red chili powder, turmeric powder, salt to taste and cook it for 5-6 minutes on medium flames.
  • Add foxnuts, cashew nuts, water and mix it well.
  • Cover it with a lid and allow it to cook for a while..
  • Transfer it to a bowl and keep it aside to cool down at room temperature.
  • Transfer the mixture to a mixer grinder jar and grind it into a smooth paste.
  • Keep it aside for further use.

 

For Soaking Cashew Nuts

  • In a bowl, add hot water as required, add cashew nuts and keep it aside for a while.

 

For Frying Foxnuts

  • In a pan, add ghee, once it’s hot, add foxnuts, salt to taste, degi red chili powder and toss it well.
  • Transfer it to a bowl and keep it aside for further use.

 

For Kaju Makhane Wala Paneer

  • In the same handi, add ghee, once it’s hot, add prepared gravy, water and simmer it for 2-3 minutes.
  • Add ghee, paneer, salt to taste, tender coriander stems and cook it for a while.
  • Finish it with some cashew nuts, sugar and give it a quick boil.
  • Transfer it to a serving dish, garnish it with fried foxnuts, fried cashew nuts, sprinkle some crushed dry fenugreek leaves, drizzle some fresh cream, chili oil and coriander sprig.
  • Serve hot with roti or paratha.
