Hyderabadi Mixed Dal Tadka निज़ामी दाल तड़का Mughlai Dal recipe

Ingredients
For Washing Dal
½ cup whole Green Moong (washed & soaked) हरी मूंग दाल
1 cup Chana Dal (washed & soaked) चना दाल
1 cup Toor dal (washed & soaked) तूर दाल
Water as required, पानी
For Boiling Dal
4-5 cups Water, पानी
3-4 tbsp Ghee, घी
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
For Onion Coriander Paste
2 large Onions, cut into half, प्याज
2 no. Green chillies (less spicy & broken into half) हरी मिर्च
¼ cup fresh Coriander leaves, roughly torn, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
1 tbsp Oil, तेल
½ inch Ginger (peeled & sliced) अदरक
For Tempering
2 tbsp Oil, तेल
Prepared Onion Coriander Paste, तयार किया हुआ प्याज धनिये का पेस्ट
¼ tsp Asafoetida, हींग
1 tbsp Coriander powder, धनिया पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
1 cup Curd, beaten, दही
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
A pinch of cumin powder, जीरा पाउडर
2 tbsp Fried Onion, (optional) तले हुए प्याज
Boiled Dal, उबली हुई दाल
1-2 tbsp Ghee, घी
2 tbsp Fried Onion, (optional) तले हुए प्याज
½ inch Ginger (peeled & julienned) अदरक
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
Prepared Tadka, तयार किया हुआ तड़का
For Tadka
2 tbsp Oil, तेल
1 tbsp Ghee, घी
5-6 no. dry Red chillies, सूखी लाल मिर्च
½ tsp Cumin seeds, जीरा
For Garnish
Prepared Tadka, तयार किया हुआ तड़का
Coriander sprig, धनिया पत्ता
Fried Onions, तले हुए प्याज
Process
For Washing Dal
- In a bowl, add green green moong dal, chana dal, toor dal and wash it well.
- Add water for soaking and leave it aside for 10-15 minutes.
For Boiling Dal
- In a pressure cooker, add water, ghee, salt to taste, turmeric powder, soaked TATA SAMPANN green moong dal, chana dal and toor dal.
- Cover it with a lid and cook it until 3-4 whistles. Keep it aside to cool down at room temperature.
- Mash it well with a masher and keep it aside for further use.
For Paste
- In a mixer grinder jar, add onions, green chillies, fresh coriander leaves, salt to taste, oil, ginger and grind it smoothly .
- Keep it aside for further use.
For Tempering
- In a handi, add oil, once it’s hot, add prepared onion coriander paste and saute it for 5-6 minutes until golden brown.
- Add asafoetida, coriander powder, turmeric powder, curd and saute it well.
- Add degi red chili powder, a pinch of cumin powder, fried onions, boiled dal, ghee and cook it well for 4-5 minutes.
- Finish it with some fried onion, ginger, coriander leaves, prepared tadka and mix it well.
- Transfer it to a serving bowl, garnish it with prepared tadka, coriander sprig and fried onions.
- Serve hot with roti or naan.
For Tadka
- In a pan, add oil, ghee, once it’s hot, add dry red chillies, cumin seeds and splutter well.
- Keep it aside for further use.
