
Healthy Kadhi Pakoda बाजरे की पकोड़ा कढ़ी Monsoon Spl healthy Millet Recipe
Celebrating the International Year of Millets, here is my favourite recipe - Pakora and Kadhi with Bajra.
Ingredients
For Kadhi
1 cup Curd, beaten, दही
2 cups Water, पानी
Salt to taste, नमकस्वादअनुसार
½ tsp Sugar, चीनी
½ tsp Turmeric powder, हल्दी पाउडर
A pinch of Asafoetida, हींग
A pinch of degi red chili powder, देगी लाल मिर्च पाउडर
1 tbsp Bajra flour, बाजरे का आटा
2 ½ tbsp Ghee, घी
Fried Pakora, तले हुए पकौड़े
¼ cup Water, पानी
½ tbsp Ghee, घी
For Roasting Flour
1 cup Bajra flour, बाजरे का आटा
For Pakoda
3 medium Onions, sliced, प्याज
¼ cup Carom leaves, roughly torn, अजवाइन के पत्ते
3 tbsp Curd, beaten, दही
½ inch Ginger (peeled & grated) अदरक
Salt to taste, नमकस्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
¼ tsp Asafoetida, हींग
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Fennel seeds, सौंफ
½ cup Roasted Bajra flour, बाजरे का आटा
2 tbsp Curd, beaten, दही
Other Ingredients
Oil for frying, तेल तलने के लिए
For Jowar Popcorn
½ tsp Oil, तेल
2-3 tbsp Jowar, ज्वार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Kadhi
- In a bowl, add curd, water, salt to taste, sugar, turmeric powder, asafoetida, degi red chili powder, bajra flour, ghee and mix it well.
- Transfer the mixture in a saucepan or kadai and cook it for 15-18 minutes or until thick at low flame.
- Add fried pakora, water and give a quick boil on medium flame.
- Finish it with some ghee and transfer it to a serving bowl.
- Garnish it with coriander sprig and serve hot with steam rice.
For Roasting Flour
- In a pan, add bajra flour and roast it for 4-5 minutes on medium flame.
- Transfer it to a tray and keep it aside for further use.
For Pakoda
- In a bowl, add onions, carom leaves, curd, ginger, salt to taste, turmeric powder, asafoetida, degi red chili powder, fennel seeds, bajra flour and mix it well.
- In a kadai, heat oil, take lemon size mixture and drop it into hot oil.
- Fry it for 4-5 minutes until half cooked and transfer it to an absorbent sheet.
- Refry the pakoda for 2-3 minutes until golden brown and crispy.
- Transfer it to an absorbent paper and keep it aside for further use.
For Jowar Popcorn
- In a pan, heat oil, add jowar and cover it with the lid.
- let it puff for 3-4 minutes on medium flame.
- Transfer it to a bowl and keep it aside for further use.
