
Jeera Aloo and Aloo Shimla Mirch सूखे आलू की 2 सब्जी
Can we imagine a life without potatoes? Bhale hi aloo humaara apna nahin hai, par humne isey poori tarah apnaaya hai, agree? :) Here are, not one, but Two Aloo sabjis for you - Jeera Aloo and Aloo-Capsicum. Enjoy cooking and let me know :)
Ingredients
For Jeera Aloo
1 tbsp Oil, तेल
1 tbsp Mustard Oil, सरसों का तेल
1 tsp Cumin Seeds, जीरा
¼ tsp Asafoetida, हिंग
1 Fresh Green Chilli, broken, हरी मिर्च
4-5 Potato, boiled, cubed, आलू
¼ tsp Turmeric Powder, हल्दी पाउडर
¼ tsp Red Chilli Powder, लाल मिर्च पाउडर
½ tsp Sugar, चीनी
Salt To Taste , नमक स्वादअनुसार
1 tsp Lime Juice, नीबू का रस
Coriander Leaves, chopped, धनिया पत्ती
For Garnish
Lime Wedge, नींबू
Coriander Sprig,धनिया
For Aloo Simla Mirch
1 tbsp Oil, तेल
1 tsp Cumin Seeds, जीरा
1 Medium Onion, chopped प्याज
1 inch Ginger, chopped, अदरक
2-3 Garlic Cloves, chopped, लहसुन
2 Bell Pepper , Cubed, शिमला मिर्च
1 tsp Sugar, चीनी
1 tsp Ghee, घी
4-5 Potato, boiled, cubed, आलू
½ tsp Turmeric Powder, हल्दी पाउडर
½ tsp Red Chilli powder, लाल मिर्च पाउडर
¼ tsp Garam Masala, गरम मसाला
¼ tsp Coriander Powder, धनिया पाउडर
¼ cup Water, पानी
1 Tomato, cubed, टमाटर
Salt To Taste , नमक स्वादअनुसार

Process
For Aloo Shimla Mirch
- Heat oil in a heavy bottomed pan, add cumin seeds let it crackle.
- Add chopped ginger, garlic and onions mix well.
- Add bell pepper, sugar and ghee. saute for a few minutes until tender and begin to start changing color. the bell pepper would be lightly browned around the edges and softened too.
- Stir in the boiled potatoes, add turmeric powder, red chilli powder and garam masala powder, coriander powder, salt to taste and tomatoes.
- Stir the vegetables along with the spices until well coated with the spices. cover the pan; turn the heat to low and simmer for about 5 minutes, stirring occasionally.
- Once done, turn off the heat, stir with freshly chopped coriander leaves.
- Serve aloo simla mirch ki sabzi recipe along with phulkas.
For Jeera Aloo
- In a pan, heat oil on medium flame and mustard oil let the oil become hot.
- Add cumin seeds and let them crackle.
- Now, add asafoetida, green chillies and mix very well.
- Add the potato cubes. Toss them well with the cumin seeds and green chilies.
- Sprinkle turmeric powder, red chili powder, sugar and salt to taste as required.
- Saute the potatoes for 2 to 3 minutes on low to medium flame till they are crisp stirring often.
- Next add coriander leaves and lemon juice.
- Mix the whole mixture well. Serve jeera aloo hot with phulkas or pooris.
