Ingredients
For Chicken Marination
900 gms Chicken breast, cut into diced, चिकन
¼ cup Curd, beaten, दही
1 heaped tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
For Boiling Onion
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Ghee, घी
4 no. large Onions, roughly sliced, प्याज
2 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
4-5 no. Garlic cloves, लहसुन
5-6 no. Cashew nuts, काजू
½ tsp Sugar, चीनी
For Sauteing Chicken
2-3 tbsp Oil, तेल
Marinated Chicken, मैरीनेटेड चिकन
For Chicken Lazeez
2 tbsp Oil, तेल
1 heaped tbsp Ghee, घी
2 no. Bay leaf, तेज पत्ता
1 no. Green cardamom, हरी इलायची
1 no. Black cardamom, बड़ी इलायची
Prepared Onion Paste, तयार किया हुआ प्याज का पेस्ट
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 tsp Coriander powder, धनिया पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
A pinch of Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Ghee, घी
½ cup Curd, beaten, दही
1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
½ cup fresh Tomato puree, ताजे टमाटर की प्यूरी
1 Green chili, slit into middle, हरी मिर्च
1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
1 cup Water, पानी
1 ½ tbsp Ghee, घी
Sauteed chicken, भुना हुआ चिकन
1 tsp Sugar, चीनी
1 tsp dry Fenugreek leaves, crushed, कसूरी मेथी
1 tbsp Butter, cubed, मक्खन
For Garnish
Coriander sprig, धनिया पत्ता
Butter, cubed, मक्खन
dry Fenugreek leaves, crushed, कसूरी मेथी
Process
For Chicken Marination
- In a bowl, add chicken, curd, ginger garlic paste, salt to taste, turmeric powder, degi red chili powder and mix it well.
- Keep it aside to marinate for 10-15 minutes.
For Boiling
- In a handi, add water, salt to taste, ghee, onions, green chillies, garlic, cashew nuts, sugar and give it a quick.
- Strain the excess water, transfer it to a mixer grinder jar and grind it smoothly.
- Keep it aside for further use.
For Sauteing Chicken
- In a pan, add oil, once it’s hot, add marinated chicken pieces and saute it for 3-4 minutes on both sides until tender.
- Transfer it to a bowl or tray and keep it aside for further use.
For Chicken Lazeez
- In the same handi, add oil, ghee, once it’s hot, add bay leaf, green cardamom, black cardamom and let it splutter.
- Add prepared paste, ginger garlic paste and saute it for a while.
- Add coriander powder, turmeric powder, degi chili powder, ghee and mix it well.
- Add curd, black peppercorns crushed and cook it well.
- Add fresh tomato puree, green chili, tender coriander stems and give it a good mix.
- Cover it with a lid and allow it to cook for 5-6 minutes on medium flames.
- Add water to adjust the consistency, add ghee, sauteed chicken, sugar and cook it for 7-8 minutes on medium flames.
- Finish it with dry fenugreek leaves, butter and mix it well.
- Transfer it to a serving bowl or dish, garnish it with coriander sprig, butter and dry fenugreek leaves.
- Serve hot with roti or rice.
