
Ingredients
For Masala
1 ½ tbsp, Black peppercorns, काली मिर्च के दाने
Salt to taste, नमक स्वादअनुसार
1 tsp Shahi jeera, शाही जीरा
For Marination
400 gms Chicken breast, cut into medium size cubed, चिकन
1 ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 tbsp Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2-4 Green chillies (less spicy,finely chopped) हरी मिर्च
½ tbsp Tender Coriander stems, finely chopped, धनिया के डंठल
½ tsp Black peppercorn powder, काली मिर्च का पाउडर
1 tsp Mayonnaise, मायोनिज
1 Egg, अंडा
⅓ cup Refined flour, मैदा
⅓ cup Cornstarch, कॉर्न स्टार्च
¼ tsp Baking soda, बेकिंग सोडा
1 Egg white, अंडा का सफेद हिस्सा
2 tbsp Oil, तेल
For Tempering
1 ½ tsp Oil, तेल
2-3 Green chillies, chopped, हरी मिर्च
1 inch Ginger, chopped, अदरक
2 tbsp Coriander leaves, chopped, धनिया पत्ता
1 ½ tbsp Prepared Masala, तैयार किया हुआ मसाला
Oil for frying, तेल तलने के लिए
For Mint Dip
2 tbsp fresh Mint leaves, chopped, पुदीने के पत्ते
½ cup Curd, beaten, दही
1 tbsp Prepared Masala, तैयार किया हुआ मसाला
Salt to taste, नमक स्वादअनुसार
½ tsp sugar, चीनी
For Cheese Dip
⅓ cup Mayonnaise, मायोनिज
¼ cup Process cheese, grated, प्रोसेस चीज
1 tsp Chili flakes, चिली फ्लेक्स
For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Process
For Masala
- In a pan, add black peppercorns, salt to taste and Shahi jeera.
- Roast for 20 to 30 seconds or till fragrant.
- Now, transfer it into a mortar pestle and make coarse powder or grind it in a grinder jar and keep it aside for further use.
For Marination
- In a bowl, add chicken breast, ginger garlic paste, curd, salt to taste, green chillies, coriander stems.
- Add black peppercorns powder, mayonnaise and mariante well. Rest for at least 10-15 minutes.
- Add egg, refined flour, cornstarch, baking soda, egg white and mix everything well.
- Add oil and mix well.
For Frying
- Heat oil in a kadai on medium flame.
- Now, fry the marinated chicken on a slow to medium flame till golden in color and cook well from inside.
- Remove in an absorbent paper and keep it aside for further use.
For Tempering
- Firstly, cut the fried Chicken Kali mirch into half.
- Now, in a saucepan, add oil, once it gets hot add fried chicken Kali mirch. Sauté well.
- Now, add coriander leaves, green chillies, ginger, sprinkle some prepared masala, salt to taste and toss everything well.
- Serve hot with prepared dips and enjoy.
For Mint Dip
- In a bowl, add curd, mint leaves, prepared masala, salt to taste, sugar and mix it well.
- Keep it aside for further use.
For Cheese Dip
- In a bowl, add mayonnaise, grated cheese, chili flakes and mix it well.
- Keep it aside for further use.
