Chicken Rogan Josh मसालेदार चिकन रोगन जोश Kashmiri Ver Masala bonus recipe
For the love of Kashmiri cuisine and flavours, this recipe is a must try. Why should Rogan Josh mean only Mutton, why not chicken too!! And..there's a bonus Kashmiri Tikki Masala for you all. :)
Ingredients
For Paste
12-15 no. Garlic cloves, लहसुन
2 no. large Onions, roughly chopped, प्याज
1 inch Cinnamon stick, दालचीनी
4 no. Black cardamom, बड़ी इलायची
10-12 no. Green cardamom, हरी इलायची
2-4 no. Cloves, लौंग
For Ver Masala
Prepared Paste, तयार किया हुआ पेस्ट
3-4 tbsp Coriander powder, धनिया पाउडर
3 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Fennel seed powder, सौंफ का पाउडर
2 tsp Dry Ginger powder, सोंठ पाउडर
Salt to taste, नमक स्वादअनुसार
4 tbsp Mustard oil, सरसों का तेल
For Chicken Marination
1 kg Chicken leg (drumsticks & thighs) चिकन
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
½ tsp Caraway seeds, शाही जीरा
1 heaped tbsp Curd, beaten, दही
2 tbsp Mustard oil, सरसों का तेल
For Chicken Rogan Josh
2 tbsp Butter, cubed, मक्खन
Prepared Ver Masala, तयार किया हुआ वेर मसाला
1 tbsp Mustard oil, सरसों का तेल
Marinated Chicken, मैरीनेटेड चिकन
1 tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
1 ⅓ cup Curd, beaten, दही
1 tbsp Butter, cubed, मक्खन
Other Ingredients
1 heaped tbsp Mustard oil, सरसों का तेल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Paste
- In a tray or a bowl, add garlic, onion, cinnamon stick, black cardamom, green cardamom and cloves.
- Transfer it to a mixer grinder jar and grind it coarsely.
- Keep it aside for further use.
For Ver Masala
- In a bowl, add prepared paste, coriander powder, degi red chili powder, fennel seeds powder, dry ginger powder, salt to taste, mustard oil and give a good mix.
- Transfer it to an airtight container for further use.
For Chicken Marination
- In a bowl, add chicken legs, degi red chili powder, salt to taste, caraway seeds, curd, mustard oil and mix it well.
- Keep it aside to marinate for a while.
For Chicken Rogan Josh
- In a handi, add butter, once it’s melted, add prepared masala, mustard oil and saute it for a minute until aromatic.
- Add marinated chicken and saute it well for 2-3 minutes.
- Add tender coriander stems, curd, butter and mix it well.
- Cover it with a lid and cook it for 10-12 minutes until cooked well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
