Ingredients
For Chicken Marination
900 gms Chicken (drumstick) चिकन
Salt to taste, नमक स्वादअनुसार
1 ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 cup Curd, beaten, दही
½ tsp White Pepper Powder, सफेद मिर्च का पाउडर
For White Onion paste
3 medium White onion, cut into half, सफेद प्याज
Salt to taste, नमक स्वादअनुसार
2 tsp Oil, तेल
For Cashew & Poppy Seeds Paste
½ tbsp Poppy seeds, soaked in water, खसखस
9-10 Cashewnut, soaked in water, काजू
For Chicken Rezala
1 tbsp Oil, तेल
1 tbsp Ghee, घी
2-3 Cloves, लौंग
1 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
2-3 Dry red chillies, सूखी लाल मिर्च
½ tbsp Butter, cubed, मक्खन
Prepared Onion Paste, तैयार किया हुआ प्याज का पेस्ट
⅓ cup Curd, beaten, दही
Marinated Chicken, मैरिनेटेड चिकन
6-7 Saffron strands, केसर
½ tsp Kewra water, केवड़ा पानी
1 tbsp Cashew & Poppy Seeds Paste, तैयार किया हुआ काजू और खसखस पेस्ट
A pinch of masala, तैयार किया हुआ मसाला
For Masala
15-18 Black peppercorns, काली मिर्च के दाने
5-6 Green cardamom, हरी इलायची
2 Mace, जावित्री
1 tsp Coriander seeds, धनिया के बीज
Salt to taste, नमक स्वादअनुसार
For Garnish
A pinch of masala, तैयार किया हुआ मसाला
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
- In a bowl, add chicken, salt to taste, ginger garlic paste, curd, white pepper powder and marinate it well.
- Rest it for 15-20 minutes and keep it aside for further use.
For White Onion paste
- In a bowl, add white onions, salt to taste and oil.
- Transfer it to a grinder jar and make a smooth paste.
- Keep it aside for further use.
For Cashew & Poppy Seeds Paste
- In a bowl, add poppy seeds and cashews.
- Transfer it to a grinder jar and make a smooth paste.
- Keep it aside for further use.
For Chicken Rezala
- In a handi or kadai, add oil, ghee, once it’s hot, add cloves, bay leaf, cinnamon stick, dry red chillies and let it splutter.
- Add butter, prepared onion paste and sauté for a minute.
- Add curd, marinated chicken and mix it well.
- Cover it with the lid and cook it for a while or until the chicken is tender.
- Add saffron strands, kewra water, prepared cashew & poppy seeds paste and mix it well.
- Let it simmer for a while and finish it with the prepared masala.
- Transfer it to a serving dish and sprinkle it with some prepared masala.
- Garnish it with coriander sprig and serve hot with lachha paratha.
For Masala
- In a bowl, add black peppercorns, green cardamom, mace, coriander seeds and salt to taste.
- Transfer it to a grinder jar and make a fine powder.
- Keep it aside for further use.
