Teekhi Aloo Biryani मसालेदार आलू दम बिरियानी Bohri style ‘Veg’ Dum Biryani

Ingredients
For Chilli Paste
1 cup Water, पानी
Salt to taste, नमक स्वादअनुसार
1 tbsp Oil, तेल
¼ cup Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Jaggery, गुड़
1 no. Black cardamom, बड़ी इलायची
1 tbsp Ginger garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Oil, तेल
For Bohri Style Aloo Dum Biryani
2-3 tbsp Oil, तेल
2 sprig Curry leaves, कड़ी पत्ते
1 tsp Cumin seeds, जीरा
7-8 no. Garlic cloves, chopped, लहसुन
2 no. Green chillies (less spicy & chopped) हरी मिर्च
1 inch Ginger (peeled & chopped) अदरक
800 gms Baby potatoes, peeled, छोटे आलू
Salt to taste, नमक स्वादअनुसार
½ cup Fried onions, तला हुआ प्याज
1 ½ cups Curd, beaten, दही
2-3 no. each Green & Black cardamom, हरी और बड़ी इलायची
4 no. Cloves, लौंग
Prepared chilli paste, तैयार की हुई मिर्च का पेस्ट
¼ cup Water, पानी
Cooked rice, पके हुए चावल
¼ cup Fried onions, तला हुआ प्याज
2-3 tbsp Saffron water, केसर का पानी
2-3 tbsp Rose water, गुलाब जल
2-3 tbsp fresh Coriander leaves, roughly torn, धनिया पत्ता
2 tbsp Ghee, घी
½ tbsp Garam masala (optional) गरम मसाला
For Cooking Rice
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
3 no. Bay leaf, तेजपत्ता
10-12 no. Black peppercorns, काली मिर्च के दाने
2-4 no. each Cloves & Green cardamom, लौंग और हरी इलायची
1 tbsp Ghee, घी
600 gms Sella Basmati rice (soaked for 20 minutes) सेला बासमती चावल
For Raita
2 tbsp Oil, तेल
7-8 no. Garlic cloves, crushed, लहसुन
¼ cup Peanuts, मूंगफली
4-5 no. dry Kashmiri red chillies (deseed & roughly chopped) सूखी कश्मीरी लाल मिर्च
2-3 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
2 cups Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Mint sprig, पुदीना पत्ता
Process
For Chilli Paste
- In a pan, add water, salt to taste, oil, degi red chili powder, jaggery, ginger garlic paste and cook it for 4-5 minutes until cooked well.
- Add oil and give it a good mix.
- Keep it aside for further use.
For Bohri Style Aloo Dum Biryani
- In a handi, add oil, once it’s hot, add curry leaves, cumin seeds, garlic, green chillies, ginger and saute it until translucent.
- Add baby potatoes, salt to taste, fried onions and saute it for 2-3 minutes.
- Add curd, green & black cardamom, cloves and let it cook for a while until cooked well.
- Add prepared chilli paste, water, cover it with the lid and cook it for 10-12 minutes on medium flames.
- Layer it with cooked rice, fried onions, saffron water, rose water, fresh coriander leaves, ghee, garam masala, cover it with the lid and cook it on the dum for at least 15 minutes on slow flame.
- Transfer it into a serving dish, garnish it with coriander sprig and mint sprig.
- Serve hot with prepared raita.
For Cooking Rice
- In a saucepot, add water as required, salt to taste, bay leaf, block peppercorns, cloves & green cardamom and ghee.
- Once the water gets roaring boiled, add soaked sella basmati rice and cook it for 7-8 minutes until rice gets 80% cooked.
- Strain the rice and keep it aside for further use.
For Raita
- In a pan, add oil, once it’s hot, add garlic and saute it for a minute.
- Add peanuts, dry kashmiri red chillies and cook for another 2-3 minutes.
- Strain the garlic, peanuts, dry kashmiri red chillies and transfer it to a mortar pestle and grind it into a coarse paste.
- In a bowl, add fresh coriander leaves, curd, salt to taste, prepared chutney mixture and give it a good mix.
- Transfer it to a serving bowl and serve with prepared biryani.
