Ingredients
For Chicken Marination
1 kg Chicken legs, cut into half, चिकन
1 ½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tbsp Mustard oil, सरसों का तेल
For Ginger Garlic Paste
7-8 no. Garlic cloves, लहसुन
3 no. Green chillies, roughly chopped, हरी मिर्च
1 inch Ginger (peeled & chopped) अदरक
For Cooking Chicken
⅓ cup Mustard oil, सरसों का तेल
Marinated chicken, मैरीनेटेड चिकन
For Bihari Chicken Curry
¼ cup Mustard oil, सरसों का तेल
3 no. dry Red chillies, सूखी लाल मिर्च
2-3 no. Bay leaf, तेज पता
1 inch Cinnamon stick, दालचीनी
3-4 no. Black cardamom, बड़ी इलायची
2 no. Cloves, लौंग
4-5 no. medium Onions, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
3 no. whole Garlic, साबुत लहसुन
Prepared Ginger garlic paste, अदरक लहसुन का पेस्ट
2 tsp Turmeric powder, हल्दी पाउडर
1 ½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Cumin powder, जीरा पाउडर
1 heaped tbsp Coriander powder, धनिया पाउडर
Little water, पानी
Cooked chicken (80% cooked chicken) पका हुआ चिकन
1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
1-2 cups Water, पानी
1 tbsp Prepared Garam Masala, तयार किया हुआ गरम मसाला
For Garam Masala
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
1 no. Mace, जावित्री
7-8 no. Green cardamom, हरी इलायची
1 tsp Cumin seeds, जीरा
½ tsp small Mustard seeds, बारीक राई
5 no. Black cardamom, बड़ी इलायची
½ tbsp Coriander seeds, धनिये के बीज
4-5 no. Cloves, लौंग
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
- In a large bowl, add chicken legs, turmeric powder, salt to taste, degi red chili powder, mustard oil and mix it well.
- Keep it aside to marinate well.
For Ginger Garlic Paste
- In a mortar pestle, add garlic cloves, green chillies, ginger and coarsely paste.
- Keep it aside for further use.
For Cooking Chicken
- In a handi or kadai, add mustard oil, once it’s hot, add marinated chicken and cook for 7-8 minutes on both sides until golden in color..
- Transfer it to a tray and keep it aside for further use.
For Bihari Chicken Curry
- In the same handi, add mustard oil, once it’s hot, add dry red chillies, bay leaf, cinnamon stick, black cardamom, cloves and let it splutter well.
- Add onions and saute it for 2-3 minutes until translucent.
- Add salt to taste, whole garlic and saute it for a minute.
- Cover it with a lid and cook for 5-6 minutes on medium flames.
- Add prepared ginger garlic paste and mix it well.
- Add turmeric powder, degi red chili powder, cumin powder, coriander powder and cook it well.
- Add little water, cooked chicken, tender coriander stems and give it a good mix.
- Add water, prepare masala and let it simmer.
- Cover it with a lid and cook it for a while until cooked well.
- Transfer it to a serving dish or bowl and garnish it with coriander sprig.
- Serve hot with roti or rice.
For Garam Masala
- In a pan, add black peppercorns, mace, green cardamom, cumin seeds, and small mustard seeds, black cardamom, coriander seeds, cloves, salt to taste and dry roast it on medium flames for 2-3 minutes until aromatic.
- Transfer it to a mixer grinder jar and grind it to a fine powder.
- Keep it aside for further use.
