
Ingredients
1 kg Mutton kheema , मटन खीमा
1 tbsp Red chilli powder, लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 ½ cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2-3 Green chilli, slit, हरी मिर्च
Whole Nutmeg, साबुत जायफल
5-6 Mutton bones, मटन कि हाड़ी
3 tbsp Ghee, घी
For Tempering
¼ cup Ghee, घी
2 tbsp Oil, तेल
1 Bay leaves, तेज पता
2 Cloves, लौंग
10–12 Black peppercorns, काली मिर्च
2 Black Cardamom, काली इलाइची
3-4 Onion, chopped, प्याज
1 cup Curd, beaten, दही
2 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Degi Red chilli powder, लाल मिर्च पाउडर
2 tbsp Coriander powder, धनिया पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
½ tsp Cumin powder, ,जीरा पाउडर
A pinch of Asafoetida, हींग
For Masala
3 tbsp Black peppercorns, काली मिर्च
5-6 Black Cardamom, काली इलाइची
3-4 Green Cardamom, हरी इलायची
3-4 Cloves, लौंग
3 tbsp Coriander stems, धनिया के डंठल
½ cup Green peas, हरे मटर
1 tbsp Prepared masala, तयार किया हुआ मसाला
1-2 Green chilli, chopped, हरी मिर्च
Hand full of Coriander leaves, chopped, धनिया
Hand full of Mint leaves, chopped, पुदीना
Process
- In a bowl, add mutton kheema, red chilli powder, turmeric powder, curd, salt to taste, ginger garlic paste, green chilli, whole nutmeg, mutton bones mix everything well.
- Transfer this into the cooker. Add ghee cover and cook till 2-3 whistles.
For Tempering
- Heat oil and ghee in another saucepot, add bay leaves, cloves, blackpeppercons, black cardamom let the whole spices splutter.
- Add onion and saute till light golden brown.
- In a bowl, add curd, ginger garlic paste, degi red chilli powder, coriander powder, turmeric powder, cumin powder, a pinch of asafoetida mix well.
- Transfer this mixture into the sauce pot saute well.
- Remove the mutton bones and the whole nutmeg and mix it well.
- Put the kheema in the sauce pot and mix well.
- Then add chopped coriander stems and green peas and then the prepared masala mix it well.
- Cover and cook for 2 minutes .
- Lastly add chopped coriander, mint and green chilli.
- Garnish it with coriander leaves and serve hot with roti or pav.
For Masala
- In a grinder add black peppercorn, cloves, black cardamom, green cardamom and grind it into powder. And keep it aside for later use.
