Ingredients
For Frying Yam
800 gms Foot long yam (peeled & cut into batons) बंडे
1 cup Mustard oil, सरसों का तेल
3-4 tbsp Oil, तेल
For Bande Ki Sabji
Remaining mustard oil, बचा हुआ सरसों का तेल
3 no. dry Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
½ tsp Fennel seeds, सौंफ़
½ tsp Cumin seeds, जीरा
¼ tsp Nigella seeds, कलौंजी
1 inch Ginger (peeled & roughly chopped) अदरक
2 medium Onions, sliced, प्याज
1 sprig Curry leaves, कड़ी पत्ते
Salt to taste, नमक स्वादअनुसार
2 tsp Coriander powder, धनिया पाउडर
½ tsp Cumin powder, जीरा पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¾ cup Curd, beaten, दही
1 cup fresh Tomato puree, ताजा टमाटर की प्यूरी
1 tbsp Tender Coriander stems with roots, finely chopped, धनिये के डंठल और जड़ें
Fried foot long yam, तले हुए बंडे
1 ¼ cup Water, पानी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Frying Yam
- In a non-stick kadai, add mustard oil, oil, once it’s hot, add foot long yam and fry them until golden in color.
- Transfer it to an absorbent paper and keep it aside for further use.
For Bande Ki Sabji
- In the same kadai, add remaining mustard oil, once it’s hot, add dry red chillies, fennel seeds, cumin seeds, nigella seeds, ginger and let it splutter well.
- Add onions, curry leaves, salt to taste and saute it for a while until translucent.
- Add coriander powder, cumin powder, turmeric powder, degi red chili powder, curd and cook it for 4-5 minutes.
- Add fresh tomato puree and cook it well.
- Add tender coriander stems, fried foot long yam, water to adjust the consistency and simmer it for 10-12 minutes on medium flames until cooked well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti or steam rice.
