
Ingredients
For Chutney
1-2 tbsp Oil, तेल
1 tbsp Ghee, घी
2 medium Onion, sliced, प्याज
1 inch Ginger (peeled & roughly chopped) अदरक
Salt to taste, नमक स्वादअनुसार
1 cup Coriander leaves, roughly chopped, धनिया पत्ता
¼ cup Mint leaves, roughly chopped, पुदीना पत्ता
4-5 no. Cashew Nuts, काजू
4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
1 medium Tomato, roughly diced, टमाटर
For Frying Paneer
1-2 tbsp Oil, तेल
1 tbsp Ghee, घी
500 gm fresh Paneer, diced, पनीर
For Soaking
½ cup Water, पानी
Fried Paneer, तला हुआ पनीर
For Curd Mixture
1 cup Curd, beaten, दही
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Coriander powder, धनिया पाउडर
For Chutney Wala Paneer
Remaining excess oil, तेल
A pinch of asafoetida, हींग
2-3 no. Cloves, लौंग
5-6 no. Black peppercorns, काली मिर्च के दाने
2 no. Green cardamom, हरी इलायची
½ tsp Fennel seeds, सौंफ
½ tsp Cumin seeds, जीरा
¼ tsp dry Fenugreek seeds, मेथी दाना
1 no. dry Red chili, सूखी लाल मिर्च
Prepared Curd Mixture, तयार किया हुआ दही का मिश्रण
Prepared Chutney, तयार की हुई चटनी
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
1 tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
¼ tsp dry Mango powder, आमचूर पाउडर
2-3 tbsp Fresh cream (for finishing) ताज़ा मलाई
Roasted Nuts, भुने हुए मेवे
fried Paneer, तला हुआ पनीर
2 tbsp Fresh cream, ताज़ा मलाई
For Roasting Nuts
1 tbsp Ghee, घी
7-8 no. Raisins, किशमिश
7-8 no. Cashew Nuts, काजू
For Garnish
Pomegranate pearls, अनार के दाने
Fresh cream, ताज़ा मलाई
Coriander sprig, धनिया पत्ता
Process
For Chutney
- In a pan, add oil, ghee, once it’s hot, add onions, salt to taste, ginger and saute it well until translucent.
- Transfer it to the mixer grinder jar, add coriander leaves, mint leaves, cashew nuts, green chillies, tomato and grind it into a smooth paste.
- Keep it aside for further use.
For Frying Paneer
- In the same pan, add oil, ghee, once it’s hot, add paneer and fry until golden brown.
- Transfer it to a tray, add water and leave it aside to soak for 15-20 minutes.
- Keep it aside for further use.
For Curd Mixture
- In a bowl, add curd, degi red chili powder, turmeric powder, coriander powder and mix it well.
- Keep it aside for further use.
For Chutney Wala Paneer
- In a kadai or handi, add remaining excess oil, once it’s hot, add a pinch of asafoetida, cloves, black peppercorns, green cardamom, fennel seeds, cumin seeds, dry fenugreek seeds, dry red chili and saute it well.
- Add prepared curd mixture and cook it for 4-5 minutes on medium flames.
- Add prepared chutney, salt to taste, sugar and cook it for a while.
- Add black peppercorns, dry mango powder, fresh cream and mix it well.
- Finish it with roasted nuts, fried paneer, fresh cream and give it a good mix.
- Transfer it to a serving dish, garnish it with pomegranate pearls, fresh cream and coriander sprig.
- Serve hot with roti or paratha.
For Roasting Nuts
- In a pan, heat ghee, add raisins, cashew nuts and roast for 1-2 minutes until golden in color on medium flames.
- Transfer it to a tray or bowl and keep it aside for further use.
