Crispy Sindhi Aloo Tuk easy to make spicy potato fries आसान सिंधी आलू टुक
Continuing my cooking streak with potatoes, here's another popular recipe - Aloo tuk or the crisy Sindhi style aloo preparation

Ingredients
For Fried Potatoes
3-4 medium Potatoes – wedges (आलू)
Oil for frying (तेल तलने के लिए)
For Masala
1 tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
½ tsp Dried Mango Powder (अमचूर पाउडर)
¼ tsp Black Salt (काला नमक)
½ tsp Coriander Powder (धनिया पाउडर)
For Garnish
fresh Coriander Leaves (धनिए के पत्ते)
Process
For Fried Potatoes
- Deep fry the potato wedges in medium hot oil until soft and light golden.
- Remove on an absorbent paper and let them cool a little.
- With the help of your palm press lightly on the potato wedges one by one.
- Once all done, keep in the fridge for 5-10 minutes.
- After that fry them second time in hot oil until golden brown and crispy.
- Remove on an absorbent paper and keep aside for 5-6 minutes.
- And now fry it third time in super hot oil until golden and super crispy.
- In a hot pan add the fried potatoes and the prepared masala, coriander powder and toss it properly making sure that it is coating everything and saute for a minute on medium heat.
- Remove and serve hot and garnish with coriander leaves.
For Masala
- In a bowl add degi red chilli powder, dried mango powder, black salt mix it properly and keep aside for further use.
