
Aloo Do Pyaza होटल जैसा आलू दो प्याज़ा की आसान विधि Aloo ki Sabji
Call it restaurant style or Dhaba style, Aloo do Pyaza is a classic recipe that's actually very simple to make!
Ingredients
For Gravy
1 ½ tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
1 Black cardamom, बड़ी इलायची
2-3 Cloves, लौंग
3 no. Green cardamom, हरी इलायची
3 medium Onion, cut into dice, प्याज
1 ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 medium Tomato, roughly chopped, टमाटर
Salt to taste, नमक स्वादअनुसार
Little water, पानी
For Frying Potatoes
6-7 Potatoes, peeled & cubed, आलू
Oil for frying, तेल
For Aloo Do Pyaza
2 tbsp Butter, cubed, मक्खन
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
Fried Potatoes, तले हुए आलू
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2-3 tbsp Prepared Gravy, तैयार की हुई ग्रेवी
1 medium Onion, cubed, प्याज
1 medium Capsicum, cubed, शिमला मिर्च
1 large Tomato, cubed, टमाटर
1 tbsp Coriander leaves with stem, chopped, धनिया पत्ता
¼ cup Spring onion, roughly chopped, प्याज़ पत्ता
2-3 tbsp Prepared Gravy, तैयार किया हुआ ग्रेवी
Salt to taste, नमक स्वादअनुसार
¼ tsp Sugar (optional) चीनी
For Garnish
few Spring onion, chopped, प्याज़ पत्ता
Coriander sprig, धनिया पत्ता
Process
For Gravy
- In a sauce pot or handi, add oil, once it’s hot, add cumin seeds, black cardamom, cloves, green cardamom and let it splutter.
- Add onions and sauté it for 2-3 minutes or until translucent on high flame.
- Add ginger garlic paste and sauté for a minute.
- Add degi red chili powder, coriander powder, turmeric powder and mix it well.
- Add tomato, salt to taste, water, cover it with a lid and cook it for 4-5 minutes on moderate heat.
- Transfer it to the mixer grinder jar and grind it into a smooth paste.
- Keep it aside for further use.
For Frying
- In a kadai, add oil, once it’s hot, add potato and fry until golden in color.
- Transfer it in a bowl or tray and keep it aside for further use.
For Aloo Do Pyaza
- In a shallow pan, add butter, once it’s melted, add dry fenugreek leaves, fried potatoes and toss it well.
- Add degi red chili powder, prepared gravy and sauté it well.
- Add onion and toss it for a few seconds on high flame, add capsicum, tomato and give it a good mix.
- Add coriander leaves with stem, spring onion and prepared gravy.
- Finish it with salt to taste, sugar and mix it well.
- Transfer it to a serving dish and garnish it with spring onion, coriander sprig.
- Serve hot with roti or paratha.
