Ingredients
For Lauki Mixture
1 large Bottle gourd (peeled & grated) लौकी
2 tsp Lemon juice, नींबू का रस
1 ½ cups Semolina, सूजी
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
⅓ cup Gram flour (optional) बेसन
A pinch of asafoetida, हींग
1 cup Curd, beaten, दही
⅓ cup Water, पानी
¼ cup Cheese, grated, चीज़
⅓ cup Water, पानी
2-3 no. Green chillies (less spicy & finely chopped) हरी मिर्च
2-3 tbsp Coriander leaves, finely chopped, धनिया पत्ता
2 tsp Baking soda, बेकिंग सोडा
1 tbsp Oil, तेल
For Tadka
2 tbsp Oil, तेल
1 tbsp Urad dal, उड़द की दाल
1 tsp Small mustard seeds, छोटी राई
2 sprig Curry leaves, कड़ी पत्ते
¼ tsp Turmeric powder, हल्दी पाउडर
Other Ingredients
Oil for greasing, तेल
1 tsp Baking soda with oil, बेकिंग सोडा
Green chutney, हरी चटनी
For Garnish
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Tomato, cut into quarter, टमाटर
Mayonnaise, मेयोनेज़
A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर

For Lauki Mixture
- In a bowl, add grated bottle gourd, lemon juice and mix it well.
- Squeeze out the moisture from the bottle gourd, add salt to taste, sugar, ginger garlic paste, gram flour, a pinch of asafoetida, curd, water and give it a good mix.
- Add cheese grated, water, green chillies, coriander leaves and mix it well.
- Divide the mixture into two equal parts and keep it aside for further use.
For Tadka
- In a pan, add oil, once it’s hot, add urad dal, small mustard seeds, curry leaves and let it splutter.
- Add turmeric powder and cook it for a minute.
- Transfer it to a batter and give it a good mix.
For Dhokla & Uttapam
- In a steamer mold, grease the mold with oil, add a ladleful of batter, place it in the steamer and cook it for 12-15 minutes on medium flames.
- Remove the mold and keep it aside to cool down the temperature.
- Demold the dhokla, cut it into a desired shape, transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with green chutney.
- Take an uttapam pan, add oil, once it’s hot, pour a ladleful of batter and cook it for 2-3 minutes on both sides until cooked well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with green chutney.
For Appe & Waffle
- In an appe chetti, add oil, once it’s hot, pour a spoonful of tadka batter in each cavity and cook it for 4-5 minutes on both sides until cooked well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with green chutney.
- In a waffle machine, grease the mold with oil, pour a ladleful of tadka batter and cook it for 5-6 minutes until cooked well.
- Demold the waffle, transfer it to a serving dish, garnish it with coriander sprig, lemon wedge, tomato wedges, mayonnaise and sprinkle a pinch of degi red chili powder.
- Serve hot with green chutney.
