Ingredients

 

For Besan Ki Wadi

½ cup Curd, beaten, दही

½ tsp Turmeric powder, हल्दी पाउडर

½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

A pinch of asafoetida, हींग

1 cup Gram flour, बेसन

Salt to taste, नमक स्वादानुसार

1 tsp Oil, तेल

 

For Curd Mixture

2 cups Curd, beaten, दही

1 tsp Ghee, घी

Salt to taste, नमक स्वादानुसार

2 Green chilli, chopped, हरी मिर्च

1 inch Ginger, chopped, अदरक

1 tsp Turmeric powder, हल्दी पाउडर

½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

A pinch of asafoetida, हींग

1 ½ tbsp Coriander powder, धनिया पाउडर

1 tsp Gram flour, बेसन

 

For Gravy

2 tsp Ghee, घी

¼ tsp Fenugreek seeds, मेथी दाना

½ tsp Cumin seeds, जीरा

½ tsp Fennel seeds, सौंफ

2-3 Dry red chillies, सूखी लाल मिर्च

A pinch of asafoetida, हींग

Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण

1 cup Water, पानी

Prepared Besan Wadi, तैयार किया हुआ बेसन वडी

 

For Tadka

1 tsp Oil, तेल

¼ tsp Carom seeds, अजवाइन

¼ tsp Onion seeds, कलौंजी

¼  tsp White sesame seeds, सफेद तिल

A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर

 

Other Ingredients

Oil for greasing, तेल

 

For Garnish

fresh Mint leaves, पुदीने के पत्ते

 

Process

 

For Besan Ki Wadi

  • In a small bowl, add curd, turmeric powder, degi red chilli powder, and a pinch of asafoetida.
  • Add gram flour, salt to taste and mix it well. Make sure there’s no lumps.
  • Add oil and mix it well.
  • Switch on the steamer, and also grease the mould or the plate then pour the batter in it and steam it for 10-12 minutes on high heat.
  • Once steamed, remove and let it cool a little, then cut in the desired shape and keep it aside for further use.

 

For Curd Mixture

  • In a bowl, add curd, ghee, salt to taste, green chilli, ginger, turmeric powder, degi red chilli powder.
  • Add a pinch of asafoetida, coriander powder, gram flour and mix everything well.
  • Keep aside for further use.

 

For Gravy

  • In a kadai, add ghee once it’s hot, add fenugreek seeds, cumin seeds, fennel seeds and let it splutter well.
  • Add dry red chillies, a pinch of asafoetida, add curd mixture and mix it well.
  • On medium flame keep stirring slowly. Add water and cover it with the lid and cook until one boil.
  • Stir until the gravy boils properly.
  • Add prepared besan wadi, cover and cook them on the low flame for 3-4 minutes.
  • While serving, pour the prepared tadka over the sabji.
  • Garnish with fresh mint leaves and serve hot with chapati.

 

For Tadka

  • Heat oil in a non-stick pan, add carom seeds, onion seeds, white sesame seeds and let it splutter.
  • Add degi red chilli powder and mix it well. Keep aside for further use.
