Idli Kofta Curry | South Indian Idli Ka Naya Twist
Crispy fried Idli Koftas simmered in a rich, spicy curry—an easy and delicious twist on classic idlis!

Ingredients
For Idli Batter
- 1 kg Readymade Idli Batter, इडली बैटर
- 2-3 no. Green Chillies (less spicy & chopped), हरी मिर्च
- ½ inch Ginger (peeled & finely chopped), अदरक
- 2 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता
For Idli Kofta Curry
- 2 tbsp Ghee, घी
- 2 tbsp Oil, तेल
- 2 no. Dry Red Chillies, सूखी लाल मिर्च
- 2-3 no. Cloves, लौंग
- 3-4 no. Black Peppercorns, काली मिर्च के दाने
- 1 no. Black Cardamom, बड़ी इलायची
- 2 medium Onions (finely chopped), प्याज
- ½ inch Ginger (peeled & finely chopped), अदरक
- 2 no. Green Chillies (less spicy & chopped), हरी मिर्च
- 1 tsp Tender Coriander Stem (finely chopped), धनिया के डंठल
- 1 heaped tbsp Coriander powder, धनिया पाउडर
- 3-4 large Tomatoes (puree), ताज़े टमाटर की प्यूरी
- 1 cup Curd (beaten), दही
- ½ tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
- 1 heaped tsp Turmeric powder, हल्दी पाउडर
- 1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
- ¼ cup Water, पानी
- 1 cup Water, पानी
- Fried idlis, तली हुई इडली
- 2 cups Warm water, गर्म पानी
- 2-3 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
- Salt to taste, नमक स्वादअनुसार
For Dry Masala
- 1 tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर
- 1 tsp Dry Mango powder, आमचूर पाउडर
- ½ tsp Cumin powder, जीरा पाउडर
- ½ tsp Garam Masala, गरम मसाला
Other Ingredients
- Oil for greasing, तेल
- Oil for frying, तलने के लिए तेल
- Prepared Idli, तैयार की हुई इडली
For Garnish
- Coriander sprig, धनिया पत्ता
Process
For Idli Batter
- In a bowl, add readymade idli batter, green chillies, ginger. Fresh coriander leaves and give it a good mix.
- Pour the batter into the greased idli mold, place the mold into the idli steamer and cook for 7-8 minutes or until it’s cooked.
- Once the idlis are cooked then demold the idlis and cut into desired shape.
- Add the idli pieces into the hot oil and fry them until golden brown in colour.
- Transfer it into the absorbent sheet and keep it aside for further use.
For Idli Kofta Curry
- In a handi, add oil, once it’s hot, add dry red chillies, cloves, black peppercorns, black cardamom, onions and cook for a while or until the onions become translucent in texture.
- Add ginger, green chillies, tender coriander stems, coriander powder and cook for 2 minutes.
- Add tomato puree, curd, degi red chilli powder, turmeric powder, ginger garlic paste and let it cook for another 4-5 minutes until oil separates from the masala.
- Add water, fried idlis, warm water, fresh coriander leaves, salt to taste and let it cook for a while.
- Transfer it into the serving dish and garnish it with coriander sprig.
For Dry Masala
- In a bowl, add degi red chilli powder, dry mango powder, cumin powder, garam masala and give it a good mix.
- Add fried idlis and toss it very gently to coat the masala on idlis.
- Keep it aside for further use.
