Ingredients

For Cooking Chickpeas

2 tbsp Oil, तेल

4-5 no. Kashmiri Dry Red Chillies, सूखी कश्मीरी लाल मिर्च

4-5 no. Garlic cloves, लहसुन

500 gms Chickpeas (soaked overnight), भीगे हुए छोले

⅓ cup Yellow Moong Dal (washed) मूंग की दाल

Water as required, पानी

Salt to taste, नमक स्वादअनुसार

 

For Bouquet Garni

2-3 no. Each Green & Black Cardamom, हरी और बड़ी इलायची

5- 6 no. Black Peppercorns, काली मिर्च के दाने

1 tbsp Tea leaves, चायपत्ती

 

For Peshwari Chole

¼ cup Ghee, घी

1 inch Ginger (peeled & roughly chopped), अदरक

8-9 large Tomatoes (cut into half),  टमाटर

3-4 no. Green Chillies (less spicy & roughly chopped), हरी मिर्च

1 tbsp Tender Coriander stems with roots ( chopped), धनिया के डंठल

Salt to taste, नमक स्वादअनुसार

2 no. Bay leaf, तेज पत्ता

½ inch Cinnamon stick, दालचीनी

Prepared Masala, तैयार किया हुआ मसाला

Cooked Chickpeas, पके हुए छोले

Prepared Masala, तैयार किया हुआ मसाला

Prepared Tira, तैयार किया हुआ तीरा

2 tsp Dry Fenugreek leaves (crushed), कसूरी मेथी

 

For Masala

2-4 tbsp Black Peppercorns, काली मिर्च के दाने

1 tbsp Coriander seeds, धनिये के बीज

1 tbsp Cumin seeds, जीरा

7-8 no. Cloves, लौंग

7-8 no. Black Cardamom, बड़ी इलायची

9-10 no. Green Cardamom, हरी इलायची

1 no. Mace, जावित्री

Salt to taste, नमक स्वादअनुसार

 

For Dry Pomegranate Chutney

2 large Tomatoes (diced), टमाटर

⅓ cup fresh Mint leaves, पुदीने का पत्ता

½ cup Coriander leaves (roughly chopped), धनिया पत्ता

1 inch Ginger (peeled & roughly chopped), अदरक

4-5 no. Green Chillies (roughly chopped), हरी मिर्च

2 heaped tbsp Dry Pomegranate seeds, सूखे अनार के दाने

Salt to taste, नमक स्वादअनुसार

½ medium Onion (cut into half), प्याज

1 tbsp Oil, तेल

 

For Frying Paneer & Chilli

100 gm Paneer (cut into cubes), पनीर
2 tbsp Ghee, घी

5-6 no. Green Chillies (spicy & slit), हरी मिर्च

Marinated Paneer, मैरिनेटेड  पनीर

½ tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर

 

For Paneer Marination

100 gms Paneer ( cut into cubes), पनीर

½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

Salt to taste, नमक स्वादअनुसार

 

For Tira

¼ cup Oil, तेल

2 inch Ginger (peeled & julienned), अदरक

2-3 no. Green Chillies (less spicy & chopped), हरी मिर्च

1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 tsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर

Little Water, पानी

 

Other Ingredients

Oil for greasing, तेल

 

For Garnish

Prepared Dry Pomegranate Chutney, तैयार की हुई चटनी

small Onion (sliced), प्याज

Fried Green Chilli, तली हुए हरी मिर्च

Fried Paneer, तला हुआ पनीर

Prepared Tira, तैयार किया हुआ तीरा

Chilli Oil,  मिर्च का तेल

Coriander sprig, धनिया पत्ता

Boiled Egg (cut into half & optional), उबले हुए अंडे

Process

For Cooking Chickpeas

  • In a pressure cooker, add oil, once its hot, add kashmiri red chillies, garlic and saute for a minute.
  • Add soaked chickpeas, washed yellow moong dal, water as required, prepared boquetgarni, salt to taste and give it a good mix.
  • Cover it with the lid and let it cook for 3-4 whistles or until it’s 70-80% cooked.

 

For Peshawari Chole

  • In a handi, add ghee, once it’s hot, add ginger, tomatoes, green chillies, tender coriander stems, salt to taste, bay leaf, cinnamon stick and give it a good mix.
  • Cover it with the lid and cook for at least 10-12 minutes until tomatoes get mushy in texture.
  • Add prepared masala and cook for 2-3 minutes until oil separates from the masala.
  • Now, add cooked chickpeas, prepared masala, give it a good mix, cover it with the lid and let it cook for a while.
  • Finish it with prepared tira, crushed dry fenugreek leaves and give it a good mix.
  • Transfer it into the serving dish or bowl, garnish it with prepared pomegranate chutney, onion, fried green chilli, fried paneer, chilli oil, coriander sprig and boiled egg.
    Serve hot with poori, bhature or khameeri roti.

 

For Masala

  • In a pan, add black peppercorns, coriander seeds, cumin seeds, cloves, black & green cardamom, mace, salt to taste and roast them for 2-3 minutes on low flames.
  • Transfer the spices into a tray and leave it for a while to cool down the temperature.
  • Transfer the auspices into the mixer grinder jar and grind it into the smooth fine powder.
  • Keep it aside for further use.

 

For Dry Pomegranate Chutney

  • In a bowl, add tomatoes, fresh mint leaves, fresh coriander leaves, ginger, green chillies, dry pomegranate pearls, salt to taste, onion, oil and give it a good mix.
  • Transfer it into the mixer grinder jar and grind it into a smooth fine paste.

 

For Frying Paneer & Chilli

  • In a pan, add ghee, once it’s hot, add green chillies, paneer and fry them until light brown in colour.
  • Transfer the chillies into the tray and leave it aside for further use.
  • Add degi red chilli powder into the pan and toss it for a minute.
  • Transfer the paneer into the tray and keep it aside for further use.
