Aamras Poori आमरस पूरी की थाली Aamras Thali Fajeto Bonus recipe
What better way to celebrate Mango season than this Thali. Sirf Aamras Poori nahin, but a whole Thali with Mango love :) And there's an easy Fajeto recipe too.
Ingredients
For Aamras
6-7 Mangoes, pulp, आम
½ cup Prepared Sugar syrup, तैयार की हुई चाशनी
¼ tsp Dry ginger powder, सोंठ पाउडर
For Sugar Syrup
1 cup Water, पानी
2 cups Sugar, चीनी
For Fajeto
Remaining mango pulp, आम का रस
2 cups Water, पानी
1 cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Gram flour, बेसन
For Tadka
1 tbsp Oil, तेल
1 no. Bay leaf, तेज़ पत्ता
½ inch Cinnamon stick, दालचीनी
2 no. Cloves, लौंग
1 sprig Curry leaves, करी पत्ते
4-5 no. Button chillies, बटन मिर्च
¼ tsp small Mustard seeds, छोटी राई
½ tsp Cumin seeds, जीरा
Prepared Fajeto, तयार किया हुआ फजेतो
1 tbsp Jaggery, गुड़
¼ tsp Ginger (peeled & grated) अदरक
For Cooking Dal
2 cups Yellow moong dal, soaked, पीली मूंग दाल
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
¼ tsp Turmeric powder, हल्दी पाउडर
For Tadka
1 ½ tbsp Oil, तेल
A pinch of asafoetida, हींग
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
Cooked yellow moong dal, पकी हुई पीली मूंग दाल
Other Ingredients
Oil for frying, तेल तलने के लिए
Dough, गुंधा हुआ आटा
For Garnish
1 tbsp Coriander leaves, finely chopped, धनिया पत्ता
Pomegranate pearl, अनार के दाने
Coriander sprig, धनिया पत्ता
Process
For Aamras
- In a bowl, mango pulp, prepared sugar syrup and mix it well.
- Transfer it to a mixer grinder jar and grind it into a smooth paste.
- Pour it into a bowl, add dry ginger powder and give it a good mix.
- Transfer it to a serving bowl, serve chilled with fried puri, idada, mango fajeto and dal ki sabji.
For Sugar Syrup
- In a saucepan, add water, sugar and let it cook for 5-6 minutes until sugar is cooked well.
- Keep it aside for further use.
For Fajeto
- In a bowl, add remaining mango pulp, water, curd, salt to taste, turmeric powder, gram flour and give it a good mix.
- Keep it aside for further use.
For Tadka
- In a handi, add oil, once it’s hot, add bay leaf, cinnamon stick, cloves, curry leaves, button chillies, small mustard seeds, cumin seeds and let it splutter well.
- Add prepared fajeto, jaggery and simmer it for 10-12 minutes on medium flames.
- Finish it with ginger and mix it well.
- Transfer it to a serving bowl and garnish it with coriander sprig.
- Serve hot with fried puri, idada, dal ki sabji and aamras.
For Cooking Dal
- In a saucepot, add soaked yellow moong dal, water, salt to taste, turmeric powder and mix it well.
- Let it simmer for a while until the dal is cooked well.
- Strain the dal, transfer it to a bowl and keep it aside for further use.
For Tadka
- In a pan, add oil, once it’s hot, add a pinch of asafoetida, degi red chili powder, coriander powder, cooked dal and saute it for 4-5 minutes.
- Add fresh coriander leaves and give it a good mix.
- Transfer it to a serving dish, garnish it with pomegranate pearls and coriander sprig.
- Serve hot with fried puri, idada, mango fajeto and aamras.
