Ingredients
For Cooking Dal
2-3 tbsp Ghee, घी
1 inch Ginger (peeled & sliced) अदरक
1 tsp Cumin seeds, जीरा
3 no. Drumstick, remove edge and cut into 1 inch long, सहजन
1 no. Green chilli (less spicy & broken into half) हरी मिर्च
2 cups Yellow Moong dal, soaked, पीली मूंग दाल
Salt to taste, नमक स्वादानुसार
½ tsp Turmeric powder, हल्दी पाउडर
A pinch of asafoetida, हींग
1 tbsp Ghee, घी
3 cups Water, पानी
For Spice Mixture
½ cup Water, पानी
2 heaped tbsp Coriander powder, धनिया पाउडर
1 ½ tsp Turmeric powder, हल्दी पाउडर
2 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Dry mango powder, आमचूर पाउडर
For Drumstic Curry
2-3 tbsp Ghee, घी
1 tbsp Oil, तेल
1 tsp Cumin seeds, जीरा
1 inch Ginger (peeled & chopped) अदरक
4 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
¼ tsp Asafoetida, हींग
Prepared Mixture, तैयार किया हुआ मिश्रण
2 medium Carrot (peeled & large diced) गाजर
2 medium Potato (peeled & diced) आलू
Salt to taste, नमक स्वादानुसार
Cooked Dal, पकी हुई दाल
2 cups Water, पानी
Salt to taste, नमक स्वादानुसार
1 cup Water, पानी
1 medium Cauliflower, florets, फूलगोभी
10-12 no. French beans, roughly chopped, फ्रेंच बीन्स
2-3 heaped tbsp Ghee, घी
2 heaped tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
1 large Tomato, diced, टमाटर
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Cooking Dal
- In a pressure cooker, add ghee, once it’s hot, ginger, cumin seeds and let it splutter well..
- Add drumstick, green chilli, yellow moong dal, salt to taste, turmeric powder, a pinch of asafoetida, ghee and mix it well.
- Add water, cover it with the lid and cook it for 2-3 whistles until cooked.
- Keep it aside to cool down at room temperature.
- Transfer the mixture into a mixer grinder jar and grind it into a smooth paste.
- Keep it aside for further use.
For Spice Mixture
- In a bowl, add water, coriander powder, turmeric powder, degi red chili powder, dry mango powder and mix it well.
- Keep it aside for further use.
For Drumstick Curry
- In a handi or kadai, add ghee, once it’s hot, add cumin seeds, ginger, green chillies, asafoetida and let it splutter well.
- Add prepared mixture, carrots and cook it for 5-6 minutes.
- Add potatoes, salt to taste, cover it with the lid and cook for a while on medium flame.
- Add cooked dal, water, salt to taste and simmer it for 10-12 minutes.
- Add water, cauliflower, french beans and cook it well.
- Finish it with ghee, tender coriander stems, tomato and give it a quick boil.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with steam rice.
