Ingredients
For Kadhai Keema
2-3 heaped tbsp Oil, तेल
3 medium Onions (roughly sliced), प्याज
Prepared masala, तैयार किया हुआ मसाला
1 tbsp Chilli flakes, चिली फ्लेक्स
1 inch Ginger (peeled & chopped), अदरक
3-4 no. Green chillies (less spicy & chopped), हरी मिर्च
4 large Tomatoes (puree), ताजे टमाटर की प्यूरी
½ cup Green garlic (finely chopped), हरी लहसुन
2 tbsp Tender Coriander stems (finely chopped), धनिये के डंठल
1 cup Spinach (finely chopped), पालक
1 cup Curd (beaten), दही
1 cup fresh Green peas, हरे मटर
Marinated chicken minced, मैरीनेट किया हुआ चिकन कीमा
1 tbsp Green chilli pickle, हरी मिर्च का अचार
½ cup fresh Coriander leaves (finely chopped), धनिया पत्ता
For Dry Masala
1 no. Mace, जावित्री
1 tbsp Black peppercorns, काली मिर्च के दाने
5-6 no. Green cardamom, हरी इलायची
2-3 no. Cloves, लौंग
2 no. Black cardamom, बड़ी इलायची
½ inch Cinnamon stick, दालचीनी
1 no. Bay leaf, तेज पत्ता
For Keema Marination
1 kg Chicken (minced), चिकन कीमा
1 heaped tbsp Coriander powder, धनिया पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 heaped tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
For Garnish
Green chilli (cut into halves), हरी मिर्च
Coriander sprig, धनिया पत्ता
Lemon wedge, नींबू की फांक
Process
For Kadhai Keema
● In a handi, add oil, once it’s hot, add onions and saute it for a while until golden in colour.
● Add prepared masala, chilli flakes, ginger, green chillies and cook it for a minute.
● Add tomato puree and let it cook for another 5-6 minutes until oil separates from the masala.
● Add green garlic, tender coriander stems, spinach, curd, fresh green peas and cook it for a while.
● Add marinated chicken minced, give it a good mix, cover it with the lid and let it cook it for 10-12 minutes on medium flames or until cooked well.
● Finish it with green chilli pickle, fresh coriander leaves and give it a good mix.
● Transfer it to a serving dish, garnish it with green chilli, coriander sprig and lemon wedge.
● Serve hot with ladi pav or khameer roti.
For Dry Masala
● In a mortar pestle, add mace, black peppercorns, green cardamom, cloves, black cardamom, cinnamon stick, bay leaf and grind it to coarse powder.
● Keep it aside for further use.
For Keema Marination
● In a bowl, add chicken minced, coriander powder, turmeric powder, degi red chili powder, salt to taste and mix it well
● Leave it aside to marinate for a while.
