Ingredients
For Paste
10-12 no. Garlic cloves, लहसुन
2 inch Ginger (peeled & sliced), अदरक
4-5 no. Green chillies (less spicy & roughly chopped), हरी मिर्च
15-20 Shallots (peeled), सांबर प्याज
⅓ cup fresh Coriander leaves (finely chopped), धनिया पत्ता
For Masala
2 heaped tbsp Coriander seeds, धनिया के बीज
1 tsp Fennel seeds, सौंफ
1 tbsp Cumin seeds, जीरा
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
1 no. Star anise, चकरीफुल
5-6 no. Green cardamom, हरी इलायची
Few Black cardamom seeds, बड़ी इलायची के दाने
4-5 no. Cloves, लौंग
2 no. Mace, जावित्री
2 inch Cinnamon stick, दालचीनी
10-12 no. Cashew Nuts, काजू
1 heaped tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 heaped tbsp Coriander powder, धनिया पाउडर
For Dindigul Biryani
2-3 heaped tbsp Oil, तेल
2 tbsp Ghee, घी
½ cup fresh Mint leaves, पुदीना पत्ता
1 large Onions (sliced), प्याज
Prepared paste, तैयार किया हुआ पेस्ट
1 kg Chicken leg (cut into half), चिकन
Salt to taste, नमक स्वादअनुसार
⅓ cup Curd (beaten), दही
3 heaped tbsp Prepared masala, तैयार किया हुआ मसाला
1 tbsp Ghee, घी
Water as required, पानी
3 no. Green chillies (cut into diagonally), हरी मिर्च
2-3 tbsp fresh Coriander leaves (roughly chopped), धनिया पत्ता
Few mint leaves, पुदीना पत्ता
650 gms Ambemohar rice (soaked for 20 minutes), भीगे हुए अम्बेमोहर चावल
Salt to taste, नमक स्वादअनुसार
2 tbsp Ghee, घी
For Salad
1 medium Tomato (chopped), टमाटर
1 medium Onion (chopped), प्याज
2 no. Green chillies (less spicy & finely chopped), हरी मिर्च
2-3 tbsp fresh Coriander leaves (chopped), धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
1 cup Curd (beaten), दही
For Garnish
Mint sprig, पुदीना पत्ता
Coriander sprig, धनिया पत्ता
Process
For Paste
- In a bowl, add garlic, ginger, green chillies, shallots and fresh coriander leaves.
- Transfer it to a mixer grinder jar and grind it into a smooth paste.
- Keep it aside for further use.
For Masala
- In a tray, add coriander seeds, fennel seeds, cumin seeds, black peppercorns, star anise, green cardamom, black cardamom seeds, cloves, mace, cinnamon stick, cashewnuts, degi red chilli powder, coriander powder and mix it well.
- Transfer it to a mixer grinder jar and grind it into a smooth powder.
- Keep it aside for further use.
For Dindigul Biryani
- In a handi, add oil, ghee, once it’s hot, add fresh mint leaves and saute it for a minute.
- Add onions and saute it until
- Add prepared paste and cook it for a while until oil is separated.
- Add chicken, salt to taste, curd and allow it to cook for 4-5 minutes on medium flames.
- Add prepared masala, ghee and cook it for a minute.
- Add water as required, green chillies, fresh coriander leaves, few mint leaves and give it a quick boil.
- Add soaked ambemohar rice, salt to taste, ghee and give it a good mix.
- Cover it with a lid and cook it on low flames for 15-20 minutes.
- Transfer it to a serving dish, garnish it with mint sprig and coriander sprig.
- Serve hot with prepared salad.
For Salad
- In a bowl, add tomato, onion, green chillies, fresh coriander leaves, salt to taste, curd and give it a good mix.
- Keep it aside for further use.
