Stuffed Gatte ki Sabji नायाब गट्टे की सब्जी No Onion/Garlic ‘Laxmi’ Gatte
Have you tried Gatte ki Sabji like this? Not your regular besan ke gatte, but these are stuffed with a rich filling fit for Goddess Lakshmi!
Ingredients
For Dough
3 cups Gram flour, बेसन
Salt to taste, नमक स्वादअनुसार
⅓ cup Curd (beaten), दही
½ tsp Turmeric powder, हल्दी पाउडर
2 tbsp Oil, तेल
1 tsp Oil (for greasing), तेल
For Stuffing
1 tbsp Ghee, घी
7-8 no. Cashewnuts (chopped), काजू
2 tbsp Sesame seeds (roasted), तिल
1 tsp Carom seeds, अजवाइन
¼ cup Peanuts (coarsely), मूंगफली
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
¼ tsp Turmeric powder, हल्दी पाउडर
¼ tsp Asafoetida, हींग
½ tsp dry Mango powder, आमचूर पाउडर
1 tsp Coriander powder, धनिया पाउडर
½ cup Jaggery, गुड़
2 heaped tbsp Tamarind pulp, इमली का गूदा
Salt to taste, नमक स्वादअनुसार
½ tsp Black peppercorns (crushed), कुटी हुई काली मिर्च
For Laxmi Gatte
2-3 tbsp Oil, तेल
1 no. Bay leaf, तेज पत्ता
¼ tsp Fenugreek seeds, मेथी दाना
½ tsp Fennel seeds, सौंफ
½ tsp Cumin seeds, जीरा
¼ tsp small Mustard seeds, छोटी राई
A pinch of Asafoetida, हींग
2-3 no. dry Kashmiri red chillies (roughly chopped), सूखी कश्मीरी लाल मिर्च
1 inch Ginger (peeled & chopped), अदरक
1 tbsp Tender coriander stems (finely chopped), धनिये के डंठल
Prepared curd mixture, तैयार किया हुआ दही का मिश्रण
½ cup Water, पानी
1 large Tomato (cut into diced), टमाटर
1 ½ cups Water, पानी
Fried gatte, तले हुए गट्टे
Remaining ghee & oil, बचा हुआ घी और तेल
Salt to taste, नमक स्वादअनुसार
For Curd Mixture
1 cup Curd, beaten, दही
2 heaped tbsp Coriander powder, धनिया पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
2 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
For Frying Gatte
1 tbsp Ghee, घी
2 tbsp Oil, तेल
Prepared gatte, तैयार किए हुए गट्टे
Other Ingredients
Oil for greasing, तेल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Dough
- In a bowl, add gram flour, salt to taste, curd, turmeric powder, oil, mix well and knead it into semisoft dough.
- Apply oil on dough and leave it aside for a while.
- Divide the dough into medium lemon size balls and make a thin roti.
- Spread prepared stuffing evenly and roll it like swiss roll.
- Transfer the gatte into a greased plate and place it into a steamer.
- Cook it for 10-12 minutes on medium flames until cooked well.
- Cut it into any desired shape and keep it aside for further use.
For Stuffing
- In a pan, add ghee, once it’s hot, cashew nuts, sesame seeds, carom seeds, peanuts and roast them for a while.
- Add degi red chili powder, turmeric powder, asafoetida, dry mango powder, coriander powder and cook it for 2-3 minutes on low flames.
- Add jaggery, tamarind pulp and cook it well for 4-5 minutes.
- Add salt to taste, crushed black peppercorns and give it a good mix.
- Transfer it to a bowl and keep it aside for further use.
For Laxmi Gatte
- In a kadai or handi, add oil, once it’s hot, add bay leaf, fenugreek seeds, fennel seeds, cumin seeds, small mustard seeds, a pinch of asafoetida, dry kashmiri red chillies and let it splutter well..
- Add ginger, tender coriander stems and saute it for a minute.
- Add prepared curd mixture and cook it for 4-5 minutes on medium flames until cooked well.
- Add water to adjust the consistency and give it a quick boil.
- Add tomato, water, fried gatte and let it simmer for a while.
- Finish it with remaining ghee, oil, salt to taste and give it a good mix.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti or rice.
For Curd Mixture
- In a bowl, add curd, coriander powder, turmeric powder, degi red chili powder and give it a good mix.
- Keep it aside for further use.
For Frying gatte
- In a pan, add ghee, oil, once it’s hot, add prepared gatte, fry them until crispy and golden in colour.
- Transfer it to an absorbent sheet and keep it aside for further use.
