Ingredients
For Cooking Soya
Water as required, पानी
130 gms Soya chunks, सोया चंक्स
150 gms Soya granules, सोया कीमा
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
1 tbsp Oil, तेल
For Gravy
¼ cup Oil, तेल
2-3 heaped tbsp Ghee, घी
1 tsp Cumin seeds, जीरा
3 medium Onion, finely chopped, प्याज
4-5 no. Green chillies (less spicy & chopped) हरी मिर्च
2 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ cup Tomato puree, टमाटर की प्यूरी
1 ¼ cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Fried onion, तला हुआ प्याज
1 tsp Turmeric powder, हल्दी पाउडर
2 heaped tbsp Coriander powder, धनिया पाउडर
½ tsp Cumin powder, जीरा पाउडर
2 heaped tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 cup Water, पानी
1 heaped tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
Cooked Soya, पका हुआ सोया
3 no. Bhavnagri mirchi (seedless & roughly chopped) भावनगरी मिर्च
½ inch Ginger (peeled & julienned) अदरक
2 tsp Sugar, चीनी
For Double Tadka
2 tbsp Ghee, घी
½ medium Onion, sliced, प्याज
¼ cup Raw mango (peeled & julienned) कच्चा आम
1 small Carrot (peeled & julienned) गाजर
1 no. Green chilli, diagonally sliced, हरी मिर्च
Prepared Soya Mixture, तैयार किया हुआ सोया का मिश्रण
¼ cup Water, पानी
½ tsp Garam masala (optional) गरम मसाला
½ tsp Black pepper powder, काली मिर्च का पाउडर
2 tsp Lemon juice, नींबू का रस
For Garnish
½ medium Onion, sliced, प्याज
Coriander sprig, धनिया पत्ता
Process
For Cooking Soya
- In a pressure cooker, add water as required, soya chunks, soya granules, degi red chili powder, turmeric powder, salt to taste, oil and give it a good mix.
- Cover it with a lid and cook it for 2-3 whistles until cooked well.
- Strain the soya mixture and keep it aside for further use.
For Gravy
- In a handi, add oil, ghee, once it’s hot, add onion, green chillies and saute it for 4-5 minutes until golden in colour.
- Add ginger garlic paste and cook it for a minute.
- Add fresh tomato puree, curd and cook it for a while until oil separates from the gravy.
- Add fried onions, turmeric powder, coriander powder, cumin powder, degi red chili powder and mix it well.
- Add water, tender coriander stems and give it a quick boil.
- Add cooked soya, bhavnagri mirchi, ginger, sugar and give it a good mix.
- Keep it aside for further use.
For Double Tadka
- In a shallow pan or tawa, add ghee, once it’s hot, add onion, raw mango, carrots, green chilli and saute it on high flames for 2-3 minutes.
- Add cooked soya, water and cook it for another 4-5 minutes.
- Finish it with garam masala, black pepper powder, lemon juice and give it a good mix.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with kulcha, sliced onion and any pickle.
