Ingredients
For Cooking Soya Chaap
2-3 heaped tbsp Ghee, घी
16 no. Soya Chaap, सोया चाप
¼ cup Ghee, घी
Water as required, पानी
Boiled Soya Chaap water, उबले हुए सोया चाप का पानी
For Tawa Chaap Marination
Cooked soya chaap, cut into half, उबला हुआ सोया चाप
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
1 tsp Lemon juice, नींबू का रस
For Tawa Masala Soya Chaap
1 tbsp Ghee, घी
1 tbsp Oil, तेल
3-4 no. Black peppercorns, काली मिर्च के दाने
2-3 no. Cloves, लौंग
1 ½ medium Onions, sliced, प्याज
1 no. Green chilli (less spicy & chopped) हरी मिर्च
½ inch Ginger (peeled & chopped) अदरक
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
½ cup fresh Tomato puree, ताजे टमाटर की प्यूरी
¼ cup Curd, beaten, दही
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Coriander powder, धनिया पाउडर
Salt to taste, नमक स्वादअनुसार
Marinated soya chaap, मैरीनेट किया हुआ सोया चाप
½ cup Water, पानी
1 medium Capsicum, sliced, शिमला मिर्च
1 large Onion,sliced, प्याज
2 tbsp Coriander leaves, chopped, धनिया पत्ता
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
Little Water, पानी
For Garnish
Coriander sprig, धनिया पत्ता
Other Ingredients
Oil for frying, तलने के लिए तेल
Process
For Cooking Soya Chaap
- In a handi, add ghee, once it’s hot, add soya chaap and cook it for a minute.
- Add ghee, water as required and mix it well.
- Cover it with a lid and let it cook for 10-12 minutes until cooked well.
- Transfer it to a tray and keep it aside for further use.
For Tawa Chaap Marination
- In a bowl, add cooked soya chaap, degi red chili powder, lemon juice and mix it well.
- Keep it aside to marinate for a while.
For Tawa Masala Soya Chaap
- In a tawa or handi, add ghee, oil, once it’s hot, add black peppercorns, cloves, onions and saute it for a while until translucent.
- Add green chilli, ginger and saute it for a minute.
- Add tender coriander stems, fresh tomato puree, curd, degi red chili powder, turmeric powder, coriander powder, salt to taste and cook it for 7-8 minutes until oil separates from the masala.
- Add marinated soya chaap, water and cook it for a while.
- Finish it with capsicum, onion, fresh coriander leaves, dry fenugreek leaves, little water and mix it well.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with rumali roti or naan.
