Ingredients
For Meethe Chawal
3 tbsp Ghee, घी
2 ½ cups Sella basmati rice (soaked for 20 minutes) सेला बासमती चावल
7-8 no. Apricots, roughly chopped (optional) खुबानी
4 cups Water, पानी
1 tbsp Saffron water, केसर का पानी
1 cup Sugar, चीनी
3 no. Cloves, लौंग
2 no, Green cardamom, हरी इलायची
½ cup Water, पानी
Fried nuts, तले हुए मेवे
¾ cup Sugar, चीनी
Little water, पानी
For Frying Nuts
2 tbsp Ghee, घी
10-12 no. Pistachios, पिस्ता
10-12 no. Almonds, cut into halves, बादाम
¼ no. dry Coconut, sliced, सूखा नारियल
10-12 no. Cashew Nuts, काजू
¼ tsp Fennel seeds, सौंफ़
¼ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
For Garnish
Mint sprig, पुदीना पत्ता
Fried nuts, तले हुए मेवे
Process
For Meethe Chawal
- In a small kadai or handi, add ghee, once it’s hot, add sella basmati rice and saute it for a minute.
- Add apricots, water, saffron water, sugar, cloves, green cardamom, water and mix well.
- Cover it with a lid and let it cook for 12-15 minutes on low flames or until cooked well.
- Finish it with fried nuts, remaining sugar, little water and give it a good mix.
- Transfer it to a serving bowl or dish, garnish it with mint sprig and fried nuts.
- Serve hot.
For Frying Nuts
- In a pan, add ghee, once its hot, add pistachios, almonds, dry coconut, cashew nuts and fry them until golden in colour.
- Add fennel seeds, crushed black peppercorns and give it a good mix.
- Turn off the flames and keep it aside for further use.
