Ingredients
For 1 st Marination
1 kg Chicken (thigh & boneless) चिकन
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Lemon Juice, नींबू का रस
For Koliwada Masala
¼ tsp Fenugreek seeds, मेथी दाना
2 tbsp Coriander seeds, धनिये के बीज
2 no. Green cardamom, हरी इलायची
½ tsp small Mustard seeds, छोटी राई
2 no. Cloves, लौंग
1 tsp Cumin seeds, जीरा
10-12 no. Black peppercorns, काली मिर्च के दाने
1 no. Black cardamom, बड़ी इलायची
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
1 tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
For 2nd Marination
1 st Marinated chicken, मैरीनेटेड चिकन
3-4 heaped tbsp Koliwada Masala, तैयार किया हुआ कोलीवाड़ा मसाला
3 no. Whole eggs, अंडे
2-3 tbsp Rice flour, चावल का आटा
2 tbsp Rice flour, चावल का आटा
3 tbsp Cornstarch, कॉर्नस्टार्च
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 tsp Oil, तेल
For Chana Koliwada
½ cup Chickpeas (soaked) भीगे हुए चने
2 tbsp Prepared koliwada masala, तैयार किया हुआ कोलीवाड़ा मसाला
2 heaped tbsp Curd, beaten, दही
2 tbsp Rice flour, चावल का आटा
Salt to taste, नमक स्वादअनुसार
little Water, पानी
Other Ingredients
Oil for frying, तलने के लिए तेल
10-12 Garlic cloves with skin, छिलके सहित लहसुन
For Garnish
Onion, rings, प्याज के छल्ले
Lemon wedge, नींबू की फांक
Green chilli, less spicy, हरी मिर्च
Coriander sprig, धनिया पत्ता
A pinch of koliwada masala, तैयार किया हुआ कोलीवाड़ा मसाला
Process
For 1 st Marination
- In a bowl, add chicken, salt to taste, ginger garlic paste, lemon juice and mix it well.
- Keep it aside to marinate for a while.
For Koliwada Masala
- In a pan, add fenugreek seeds, coriander seeds, green cardamom, small mustard seeds, cloves, cumin seeds, black peppercorns, black cardamom, salt to taste and dry roast it for 2-3 minutes until aromatic.
- Turn off the flames and add turmeric powder, degi red chili powder and coriander powder.
- Transfer it to a mixer grinder jar and grind it into a fine powder.
- Keep it aside for further use.
For 2 nd Marination
- In a bowl, add marinated chicken, koliwada masala, whole eggs, rice flour, cornstarch, degi red chili powder, oil and give it a good mix. Keep it aside to marinate for a while.
- In a kadai, add oil, once it’s hot, drop the marinated chicken pieces and fry them until it’s half cooked.
- Transfer it to an absorbent sheet and keep it aside to rest.
- Increase the flames to high, once it’s hot, refry the chicken until crispy and golden in colour..
- Transfer it to a serving dish, garnish it with onion rings, lemon wedge, green chili, coriander sprig and sprinkle some koliwada masala.
- Serve hot with green chutney.
