Ingredients
For Chicken Lazeez
2 tbsp Oil, तेल
4-5 no. Black peppercorns, काली मिर्च के दाने
2-3 no. Cloves, लौंग
1 no. Green cardamom, हरी इलायची
¼ no. Mace, जावित्री
1 large Onion, finely chopped, प्याज
1 no. dry Kashmiri red chili, broken into half, सूखी कश्मीरी लाल मिर्च
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tbsp Coriander powder, धनिया पाउडर
1 heaped tsp Turmeric powder, हल्दी पाउडर
1 cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
1 cup fresh Tomato puree, ताज़ा टमाटर की प्यूरी
1-2 tbsp Ghee, घी
Sauteed Chicken, भुना हुआ चिकन
1 ⅓ cups Water, पानी
1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
Salt to taste, नमक स्वादअनुसार
¼ tsp Sugar, चीनी
Sauteed vegetables, भुनी हुई सब्जियाँ
For Chicken Marination
1 kg Chicken (thighs & drumsticks) चिकन
Salt to taste, नमक स्वादअनुसार
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Coriander powder, धनिया पाउडर
1 tbsp dry Fenugreek leaves, कसूरी मेथी
1 tbsp Oil, तेल
1 tbsp Mustard oil, सरसों का तेल
For Sauteing Chicken
1 tbsp Oil, तेल
Marinated Chicken, मैरीनेटेड चिकन
For Sauteing Vegetables
1 tbsp Oil, तेल
1 large Onion, cut into diced, प्याज
1 large Tomato, cut into diced, टमाटर
1 large Capsicum, cut into diced, शिमला मिर्च
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Chicken Lazeez
- In a non-stick kadai or wok, add oil, once it’s hot, add black peppercorns, cloves, green cardamom, mace and let it splutter well.
- Add onions, dry kashmiri red chili and saute it for a while until translucent.
- Add ginger garlic paste and cook it for a minute.
- Add degi red chili powder, coriander powder, turmeric powder, curd and cook it for a while.
- Add salt to taste, fresh tomato puree and cook it for 10-12 minutes on medium flames.
- Add ghee, sauteed chicken and give it a good mix.
- Add water to adjust the consistency, tender coriander stems and simmer it for 3-4 minutes until thickens.
- Finish it with salt to taste, sugar, sauteed vegetables and cook it for 2-3 minutes.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti or naan.
For Chicken Marination
- In a bowl, add chicken, salt to taste, ginger garlic paste, degi red chili powder, coriander powder, dry fenugreek leaves, oil, mustard oil and give it a good mix.
- Keep it aside to marinate for 10-12 minutes.
For Sauteing Chicken
- In a pan, add oil, once it’s hot, add marinated chicken and cook for 2-3 minutes on both sides until half cooked.
- Transfer it to a bowl and keep it aside for further use.
For Sauteing Vegetables
- In a pan, add oil, once it’s hot, add onion, tomato, capsicum, salt to taste and toss it on high flames for 2-3 minutes.
- Transfer it to a tray or bowl and keep it aside for further use.
