Ingredients
For Boiling Eggs
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
1 tsp Vinegar, सिरका
6 no. Eggs, अंडे
For Paste
2 tbsp Oil, तेल
2 tbsp Ghee, घी
¼ tsp Cumin seeds, जीरा
¼ tsp Fennel seeds, सौंफ
2 medium Onion, sliced, प्याज
2 no. Garlic cloves, लहसुन
½ inch Ginger (peeled & roughly chopped) अदरक
2 medium Tomato, roughly chopped, टमाटर
2 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tbsp Coriander powder, धनिया पाउडर
3 tbsp Curd, beaten, दही
For Anda Do Pyaza
2-3 tbsp Ghee, घी
Prepared paste, तैयार किया हुआ पेस्ट
2 no. medium Potatoes (peeled & diced) आलू
Salt to taste, नमक स्वादअनुसार
½ tsp Sugar, चीनी
⅓ cup Water, पानी
1 tbsp Ghee, घी
¼ cup Water, पानी
Sauteed Eggs & Vegetables, भुने अंडे और सब्जियाँ
½ cup Spring onion, roughly chopped, हरी प्याज
For Sauteing Eggs & Vegetables
1 ½ tbsp Ghee, घी
2 medium Onion, diced, प्याज
Boiled Eggs, उबले अंडे
2 medium Tomato (deseed & diced) टमाटर
Salt to taste, नमक स्वादअनुसार
For Garnish
Green chili, slit into half, हरी मिर्च
Coriander sprig, धनिया पत्ता
Process
For Boiling Eggs
- In a sauce pot, add water as required, vinegar, eggs and cook it for 10-12 minutes or until hard boiled.
- Transfer it to chilled water, deshell and keep it aside for further use.
For Paste
- In a shallow pan or kadai, add oil, ghee once it’s hot, add cumin seeds, fennel seeds and let it splutter well.
- Add onion and saute it for 2-4 minutes until translucent.
- Add tomatoes, garlic, ginger and saute it for a while on medium flame.
- Add degi red chili powder, turmeric powder, coriander powder and mix it well.
- Add curd and cook it well on medium flames.
- Transfer it to a mixer grinder jar and grind it into smooth paste.
- Keep it aside for further use.
For Anda Do Pyaza
- In the same pan or kadai, add ghee, prepared paste, potatoes, cover it with the lid and let it cook for 10-12 minutes or until cooked well.
- Add salt to taste, sugar, water, ghee, water and give it a quick boil.
- Finish it with sauteed eggs & vegetables, spring onion and mix it well.
- Transfer it to a serving dish, garnish it with green chili and coriander sprig.
- Serve hot with roti.
For Sauteing Eggs & Vegetables
- In a pan, add ghee, once it’s hot, add onions and saute it until translucent.
- Add boiled eggs, tomato, salt to taste and give it a good toss for a minute.
- Keep it aside for further use.
