Ingredients
For Dosa Batter
1 ½ cups Semolina, सूजी
1 ½ cups Curd, beaten, दही
1 cup Water, पानी
2 heaped tbsp Poha (soaked) पोहा
1 tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Roasted chana dal, भुनी हुई चना दाल
¼ tsp Baking soda or Eno, बेकिंग सोडा
1 tsp Oil, तेल
For Allam Chutney
2-3 tbsp Oil, तेल
2 tbsp Urad dal, उड़द की दाल
2 tbsp Chana dal, चना दाल
1 tbsp Coriander seeds, धनिये के बीज
½ tsp Cumin seeds, जीरा
7-8 no. Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
2 inch Ginger (peeled & roughly sliced) अदरक
4-5 no. Garlic cloves (roughly crushed) लहसुन
1 sprig Curry leaves, करी पत्ते
¼ cup Jaggery, गुड़
2 tbsp Tamarind, soaked, इमली
Salt to taste, नमक स्वादअनुसार
Prepared Tadka, तयार किया हुआ तड़का
For Tadka
2-3 tbsp Oil, तेल
1 tsp small Mustard seeds, बारीक राई
1 sprig Curry leaves, करी पत्ते
5-6 no. Button chillies, बटन मिर्च
For Aloo Masala
2-3 tbsp Oil, तेल
¼ tsp Urad dal, उड़द की दाल
¼ tsp Chana dal, चना दाल
½ tsp small Mustard seeds, बारीक राई
A pinch of Asafoetida, हींग
1 no. Green chili (less spicy & roughly chopped) हरी मिर्च
1 sprig Curry leaves, करी पत्ते
1 no. large Onion, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
3-4 no. large Potatoes (boiled & mashed) उबले हुए आलू
For Dosa
Prepared Batter, तयार किया हुआ मिश्रण
1-2 tsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Butter, cubed, मक्खन
Process
For Dosa Batter
- In a bowl, add semolina, curd, water, soaked poha, sugar, salt to taste, roasted chana dal and mix it well.
- Transfer it to a mixer grinder jar and grind it until smooth consistency.
- Add baking soda or eno, oil and give it a gentle mix.
- Keep it aside for further use.
For Allam Chutney
- In a pan, add oil, once it’s hot, add urad dal, chana dal, coriander seeds, cumin seeds, kashmiri red chillies, ginger, garlic, curry leaves and saute for a while on medium flames.
- Transfer it to a bowl, add jaggery, tamarind and salt to taste.
- Transfer it to a mixer grinder jar and grind it smoothly.
- Transfer it to a serving bowl, add prepared tadka and mix it well.
- Keep it aside for further use.
For Tadka
- In a pan, add oil, once it’s hot, add small mustard seeds, curry leaves and let it splutter.
- Add button chillies and saute it well.
- Keep it aside for further use.
For Aloo Masala
- In a pan, add oil, once it’s hot, urad dal, chana dal, small mustard seeds and let it splutter.
- Add a pinch of asafoetida, green chillies, curry leaves and saute it well for a minute.
- Add onion, salt to taste and cook for 2-3 minutes until translucent on medium flames.
- Add turmeric powder, potatoes and cook it for a while.
- Keep it aside for further use.
For Dosa
- Heat iron tawa or nonstick tawa and season it with oil.
- Pour a ladle full of prepared dosa batter and cook it well until soft.
- Drizzle some ghee, fold it from the middle and transfer it to a serving dish.
- Garnish it with coriander sprig and butter.
- Serve hot with prepared allam chutney and aloo masala.
