Ingredients
For Mutton Korma
¾ cup Oil, तेल
¼ cup Ghee, घी
¼ cup Mustard oil, सरसों का तेल
5 no. Black cardamom, बड़ी इलायची
10-15 no. Black peppercorns, काली मिर्च के दाने
4-5 no. Cloves, लौंग
2-3 no. Green cardamom, हरी इलायची
½ inch Mace, जावित्री
4-5 no. Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
3 kg Mutton with bones, मटन
3 kg Onions, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
4-5 no. Green chillies, less spicy, हरी मिर्च
¼ cup fresh Mint leaves, पुदीने के पत्ते
½ cup Ginger Garlic paste, अदरक लहसुन का पेस्ट
4 heaped tbsp Turmeric powder, हल्दी पाउडर
60 gms Degi red chili powder, देगी लाल मिर्च पाउडर
120 gms Coriander powder, धनिया पाउडर
4-5 tbsp Ghee, घी
1 cup Water, पानी
1.2 kg Curd, beaten, दही
1 ltr Water, पानी
Salt to taste, नमक स्वादअनुसार
2 tbsp Tender coriander stems, chopped, धनिया के डंठल
3-4 tbsp Prepared Masala, तैयार किया हुआ मसाला
For Masala
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
10-12 no. Green cardamom, हरी इलायची
7-8 no. Black cardamom, बड़ी इलायची
4-5 no. Cloves, लौंग
2 no. Mace, जावित्री
Salt to taste, नमक स्वादअनुसार
For Garnish
½ inch Ginger (peeled & julienned) अदरक
fresh Coriander sprig, धनिया पत्ता
fresh Mint sprig, पुदीने के पत्ते
Process
For Mutton Korma
- In a handi, add oil, ghee & mustard oil, once it’s hot, add black cardamom, black peppercorns, cloves, green cardamom, mace, bay leaf, cinnamon stick and sauté for a minute.
- Add mutton and stir it for while on high flame.
- Add onions, salt to taste, green chilies, mint leaves and cook it for 10-12 minutes on high flame.
- Add ginger garlic paste and sauté it for 5-6 minutes.
- Add turmeric powder, degi red chili powder, coriander powder and sauté it well for a while.
- Add ghee and mix it well, add water and cook it until the masalas are cooked.
- Add curd and cook until the mutton is tender on high flame.
- Add salt to taste, cover it with the lid and cook it for an hour on low to medium flame.
- Add tender coriander stems, prepared masala and simmer it for 4-5 minutes.
- Transfer it to a serving dish or bowl, garnish it with ginger, coriander sprig and mint sprig.
- Serve hot with roti.
For Masala
- In a pan, add black peppercorns, green cardamom, black cardamom, cloves, mace, salt to taste and dry roast it for 2-3 minutes on medium flame.
- Transfer it to the mixer grinder jar and grind into fine powder.
- Keep it aside for further use.
