Ingredients
For Tadka
3-4 tbsp Oil, तेल
½ tsp small Mustard seeds, छोटी राई
2-3 no. Garlic cloves, finely chopped, लहसुन
2-3 sprig Curry leaves, कड़ी पत्ता
1 inch Ginger (peeled & finely chopped) अदरक
2-3 no. Dry kashmiri red chillies, roughly chopped, सूखी कश्मीरी लाल मिर्च
2 medium Onion, finely chopped, प्याज
1 tbsp Tender Coriander stem, finely choped, धनिये के डंठल
Salt to taste, नमक स्वादअनुसार
3-4 no. Dry kashmiri red chillies, finely chopped, सूखी कश्मीरी लाल मिर्च
2 sprig Curry leaves, कड़ी पत्ता
For Spicy Aloo
2-3 tbsp Oil, तेल
4 large Potatoes (boiled & diced) आलू
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
Salt to taste, नमक स्वादअनुसार
¼ cup Prepared Tadka, तैयार किया हुआ तड़का
For South Indian Style Dal Tadka
Prepared Tadka, तैयार किया हुआ तड़का
2 cups Cooked toor dal, पकी हुई तूर दाल
2 cups Cooked chana dal, पकी हुई चना दाल
1 ½ cup Water, पानी
1 tsp Sugar, चीनी
1 sprig Curry leaves, roughly crushed, कड़ी पत्ता
½ tsp Ghee, घी
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Tadka
- In a kadai, add oil, once it’s hot, add mustard seeds, garlic cloves, curry leaves and let it splutter.
- Add ginger, dry kashmiri red chillies and saute it for a minute.
- Add onions, tender coriander stems, salt to taste and cook it for 4-5 minutes until the onions are golden in colour.
- Add dry kashmiri red chillies, curry leaves and give it a good mix.
- Keep it aside for further use.
For Spicy Aloo
- In a pan or kadai, add oil, once it’s hot, add potatoes and shallow fry until golden in colour.
- Add degi red chili powder, turmeric powder and cook it for 4-5 minutes on medium flames.
- Add salt to taste, prepare tadka and give it a good mix.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with prepared dal tadka and steam rice.
For South Indian Style Dal Tadka
- In a handi, add prepared tadka, cooked dal, water to adjust the consistency and simmer it for 10-12 minutes on medium flames.
- Finish it with sugar, curry leaves, ghee and give it a good mix.
- Transfer it to a serving bowl and garnish it with coriander sprig.
- Serve hot with prepared spicy aloo and steam rice.
