Ingredients
For Chicken Kofta
1 kg Chicken, mince, चिकन खीमा
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
1 inch Ginger (peeled & finely chopped) अदरक
4 no. Green chillies (less spicy & chopped) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
2 medium Boiled Potatoes, mashed, उबले हुए आलू
½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Black pepper powder, काली मिर्च पाउडर
3 no. Bread slice (trim edges & roughly diced) ब्रेड स्लाइस
For Boiling Cashewnut
1 cup Water, पानी
10-12 no. Cashewnut, काजू
For Gravy
2-3 tbsp Oil, तेल
1 no. Bay leaf, तेज पत्ता
½ inch Cinnamon stick, दालचीनी
2 no. Green cardamom, हरी इलायची
1 no. Black cardamom, बड़ी इलायची
2-4 no. Cloves, लौंग
2 medium Onion, cut into half, प्याज
6 small Tomatoes, cut into half, टमाटर
Salt to taste, नमक स्वादअनुसार
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ tbsp Degi red chilli powder, देगी लाल मिर्च पाउडर
1 cup Water, पानी
Boiled cashew nuts, उबले हुए काजू
For Poaching
2 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
2 tsp Oil, तेल
1 tbsp Ghee, घी
3 no .Bay leaf, तेज पत्ता
½ inch Cinnamon stick, दालचीनी
10-12 no. Black peppercorns, काली मिर्च के दाने
2 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Prepared chicken balls, तैयार किये हुए चिकन बॉल्स
For Finishing Gravy
2-4 tbsp Butter, cubed, मक्खन
1 tsp Dry fenugreek leaves, कसूरी मेथी
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Prepared Gravy, तैयार की हुई ग्रेवी
1 cup Remaining poached water, पानी
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
Seared chicken kofta, चिकन कोफ्ता
1 tbsp Butter, cubed, मक्खन
For Searing Chicken kofta
2 tsp Oil, तेल
2 tbsp Butter, cubed, मक्खन
Poached chicken balls, उबले हुए चिकन बॉल्स
For Garnish
Coriander sprig, धनिया पत्ता
Fresh cream, ताज़ा मलाई
Process
For Chicken Kofta
- In a bowl, add chicken mince, tender coriander stems, ginger, green chillies, salt to taste, boiled potatoes, degi red chili powder, black pepper powder, bread slices and give it a good mix.
- Transfer it to a mixer grinder jar and grind it into a smooth mixture.
- Keep it aside for further use.
For Boiling Cashewnut
- In a pan, add water, cashew nuts and boil it for 2-3 minutes on high flames.
- Strain the cashew nuts and keep it aside for further use.
For Gravy
- In a handi, add oil, once it’s hot, add bay leaf, cinnamon stick, green cardamom, black cardamom, cloves, onions and saute it for a minute.
- Add tomatoes, salt to taste and cook it for 2-3 minutes.
- Add ginger garlic paste, degi red chili powder and cook it for a minute.
- Add water to adjust the consistency, boiled cashew nuts, cover it with the lid and allow to cook for a while until tomatoes are mushy.
- Transfer it to a bowl and keep it aside to cool down the temperature.
- Transfer it to a mixer grinder jar and grind it into smooth paste.
- Keep it aside for further use.
For Poaching
- In a pan, add water, salt to taste, oil, ghee, bay leaf, cinnamon stick, black peppercorns, degi red chili powder, mix well and give it a quick boil.
- Drop prepared chicken balls and cook it for 7-8 minutes until cooked well.
- Transfer the koftas into a tray, pour a ladleful of remaining poached water onto the koftas and keep it aside for further use.
For Finishing Gravy
- In a handi, add butter, once it melts, add dry fenugreek leaves, degi red chili powder and cook for a minute.
- Add prepared gravy and cook it for a while.
- Add remaining poached water to adjust the consistency, salt to taste, sugar, seared chicken koftas and simmer it for 10-12 minutes on medium flames.
- Finish it with butter and mix it well.
- Transfer it to a serving dish, garnish it with coriander sprig and fresh cream.
- Serve hot with tandoori naan or roti.
For Searing Chicken Kofta
- In a pan, add oil, butter, once it’s hot, add poached chicken balls and sear them until golden in colour.
- Transfer it into the tray and keep it aside for further use.
