Ingredients

For Frying Paneer

½ kg Paneer, large cube, पनीर

Oil for frying, तलने के लिए तेल

 

For Ginger Garlic & Green chilli Paste

2 inch Ginger (peeled & roughly chopped) अदरक

2 no. Green chillies (less spicy & chopped) हरी मिर्च

3-4 no. Garlic cloves, लहसुन

 

For Masala

Salt to taste, नमक स्वादअनुसार

1 heaped tbsp Black peppercorns, काली मिर्च के दाने

1 tbsp Coriander seeds, धनिये के बीज

½ tbsp Fennel seeds, सौंफ

1 tbsp Cumin seeds, जीरा

 

For Paneer Kheema

2 tbsp Ghee, घी

1 tsp Cumin seeds, जीरा

Prepared ginger garlic & green chilli paste, अदरक लहसुन और हरी मिर्च का पेस्ट

1 large Onion, finely chopped, प्याज

1 tbsp heaped tbsp Tender Coriander stem, chopped, धनिये के डंठल

1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

2 tsp Coriander powder, धनिया पाउडर

6-7 no. large Tomatoes, puree, ताजे टमाटर की प्यूरी

A pinch of Sugar, चीनी

Salt to taste, नमक स्वादअनुसार

1 cup fresh Green peas, हरे मटर

Fried paneer, crumble, तला हुआ पनीर

½ cup Water, पानी

Salt to taste, नमक स्वादअनुसार

1 large Tomato, finely chopped, टमाटर

1 tbsp dry Fenugreek leaves, crushed, कसूरी मेथी

2-3 heaped tbsp Prepared masala, तैयार किया हुआ मसाला

Little water, पानी

2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता

1-2 tbsp Ghee, घी

 

Other Ingredients

1 tbsp Ghee, घी

6 no. Ladi pav, लादी पाव

A pinch of Degi red chilli powder, देगी लाल मिर्च पाउडर

 

For Garnish

Lemon wedge, नींबू की फांक

Green & red chillies. Cut into halves, हरी और लाल मिर्च

Coriander sprig, धनिया पत्ता

Process

For Frying Paneer

  • In a pan, add oil, once it’s hot, add paneer and fry them for a while until golden brown.
  • Transfer it to an absorbent sheet and keep it aside to cool down at room temperature.
  • Transfer the paneer into a chopper and grind it coarsely.
  • Keep it aside for further use.

 

For Ginger Garlic Paste

  • In a mortar pestle, add ginger, green chillies, garlic and grind it into a coarse paste.
  • Keep it aside for further use.

 

For Masala

  • In a pan, add salt to taste, black peppercorns, coriander seeds, fennel seeds, cumin seeds and roast them for a while until aromatic.
  • Transfer it into a mixer grinder jar and grind it into fine powder.
  • Keep it aside for further use.

 

For Paneer Kheema

  • In a handi, add ghee, once it’s hot, add cumin seeds, prepared ginger garlic & green chilli paste and saute it for a minute.
  • Add onion and saute it for 2-3 minutes until translucent.
  • Add tender coriander stems, degi red chilli powder, turmeric powder, coriander powder and cook it for a minute.
  • Add fresh tomato puree, a pinch of sugar, salt to taste and cook it for 7-8 minutes until oil separates from the masala.
  • Add green peas, fried paneer, water, salt to taste and let it cook for a while.
  • Add tomato, dry fenugreek leaves, prepared masala, little water, cover it with the lid and cook it for another 3-4 minutes on medium flames.
  • Finish it with fresh coriander leaves, ghee and mix it well.
  • Transfer it to a serving dish, garnish it with lemon wedge, green & red chillies and coriander sprig.
  • Serve hot with toasted pav.

 

For Toasting Pav

  • In a pan, add ghee, once it’s hot, add a pinch of degi red chilli powder, place ladi pav and toast them on both sides.
  • Keep it aside for further use.
