Ingredients
For Tandoori Masala
1 heaped tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
1 tsp dry Mango powder, आमचूर पाउडर
½ tsp Garam masala, गरम मसाला
½ tsp Cumin powder, जीरा पाउडर
For Ginger Green Chilli Paste
4-5 no. Green chillies (less spicy & chopped) हरी मिर्च
2 inch Ginger (peeled & chopped) अदरक
For Sabudana Mixture
3 medium Boiled potatoes (peeled & mashed) उबले हुए आलू
2 medium Boiled sweet potatoes (peeled & mashed) उबले हुए शकरकंद
2 cups Tapioca pearls (soaked overnight) भीगा हुआ साबूदाना
For Tandoori Sabudana Vada
Prepared tandoori masala, तैयार किया हुआ तंदूरी मसाला
1 tbsp fresh Coriander leaves, धनिया पत्ता
1 tbsp Prepared ginger green chilli paste, अदरक हरी मिर्च का पेस्ट
1 ½ cups prepared sabudana mixture, तैयार किया हुआ साबूदाने का मिश्रण
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar, चीनी
For Schezwan Sabudana Vada
2 tbsp Schezwan chutney, शेज़वान चटनी
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
1 tbsp Prepared ginger green chilli paste, अदरक हरी मिर्च का पेस्ट
1 ½ cups prepared sabudana mixture, तैयार किया हुआ साबूदाने का मिश्रण
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar, चीनी
2-3 tbsp Poha powder, पोहा पाउडर
For Sabudana Vada
2-3 sprig Curry leaves, chopped, कडी पत्ते
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
¼ cup Roasted peanuts, crushed, भुनी हुई मूंगफली
1 tbsp Prepared ginger green chilli paste, अदरक हरी मिर्च का पेस्ट
1 ½ cups prepared sabudana mixture, तैयार किया हुआ साबूदाने का मिश्रण
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar, चीनी
¼ tsp Cumin seeds, जीरा
For Chutney Wala Sabudana Vada
2-3 tbsp Green chutney, हरी चटनी
1 sprig Curry leaves, chopped, कडी पत्ते
2 tbsp Roasted peanuts, crushed, भुनी हुई मूंगफली
1 tbsp Prepared ginger green chilli paste, अदरक हरी मिर्च का पेस्ट
1 ½ cups prepared sabudana mixture, तैयार किया हुआ साबूदाने का मिश्रण
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar, चीनी
¼ tsp Cumin seeds, जीरा
2 ½ heaped tbsp Poha powder, पोहा पाउडर
For Chutney
2 cups Curd, beaten, दही
¼ cup Roasted peanuts, crushed, भुनी हुई मूंगफली
1 tbsp Prepared ginger green chilli paste, अदरक हरी मिर्च का पेस्ट
1 medium Cucumber (peeled, deseed & grated) खीरा
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
Other Ingredients
1 cup Roasted peanuts, crushed, भुनी हुई मूंगफली
5-6 sprig Curry leaves, chopped, कडी पत्ते
2-3 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
Oil for frying, तलने के लिए तेल
For Garnish
Lemon wedge, नींबू की फांक
Fried Green chilli, तली हुई हरी मिर्च
Coriander sprig, धनिया पत्ता
Process
For Tandoori Masala
- In a bowl, add degi red chili powder, coriander powder, dry mango powder, garam masala, cumin powder and mix it well.
- Keep it aside for further use.
For Ginger Green Chilli Paste
- In a mortar pestle, add ginger, green chillies and grind it into a coarse paste.
- Keep it aside for further use.
For Sabudana Mixture
- In a bowl, add boiled potatoes, boiled sweet potatoes, soaked tapioca pearls and mash them well.
- Keep it aside for further use.
For Tandoori Sabudana Vada
- In a bowl, add prepared tandoori masala, fresh coriander leaves, prepared ginger green chilli paste, prepared sabudana mixture, salt to taste, a pinch of sugar and give it a good mix.
- Heat oil in a kadai, add prepared sabudana vada and fry them until golden in colour.
- Transfer it to a serving dish, garnish it with lemon wedge and coriander sprig.
- Serve hot with prepared vrat ki chutney.
For Schezwan Sabudana Vada

- Heat oil in a kadai, add prepared sabudana vada and fry them until golden in colour.
- Transfer it to a serving dish, garnish it with lemon wedge and coriander sprig.
- Serve hot with prepared vrat ki chutney.
For Sabudana Vada
- In a bowl, add curry leaves, fresh coriander leaves, crushed roasted peanuts, prepared ginger green chilli paste, prepared sabudana mixture, salt to taste, a pinch of sugar, cumin seeds and give it a good mix.
- Heat oil in a kadai, add prepared sabudana vada and fry them until golden in colour.
- Transfer it to a serving dish, garnish it with lemon wedge and coriander sprig.
- Serve hot with prepared vrat ki chutney.
For Chutney Wala Sabudana Vada
- In a bowl, add green chutney, curry leaves, fresh coriander leaves, crushed roasted peanuts, prepared ginger green chilli paste, prepared sabudana mixture, salt to taste, a pinch of sugar.
- Add cumin seeds, poha powder and give it a good mix.
- Heat oil in a kadai, add prepared sabudana vada and fry them until golden in colour.
- Transfer it to a serving dish, garnish it with lemon wedge and coriander sprig.
- Serve hot with prepared vrat ki chutney.
For Vrat Ki Chutney
- In a bowl, add curd, crushed roasted peanuts, prepared ginger green chilli paste, cucumber, salt to taste, sugar and give it a good mix.
- Transfer it to a serving bowl and serve with prepared sabudana vada.
