Spicy Gavar Phali sabji मज़ेदार ग्वार फली सब्जी 2 तरह से Cluster Beans gravy
A vegetable that excited me as a kid, Gawar Phali and we loved the way Biji prepared it. Sharing my memories and the recipe with you :)
Ingredients
For Sukhi Guar Ki Sabji
2-3 heaped tbsp Mustard oil, सरसों का तेल
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ़
1 large Onion, chopped, प्याज
A pinch of asafoetida, हींग
2 medium Potatoes, roughly sliced, आलू
400 gms Guar beans (trim tip & tail, finely chopped) ग्वार फलियाँ
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
¼ inch Ginger (peeled & finely chopped) अदरक
1 no. Green chili (less spicy & finely chopped) हरी मिर्च
1-2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
½ tsp dry Mango powder, आमचूर पाउडर
For Rasse Wale Guar Ki Sabji
2 heaped tbsp Mustard oil, सरसों का तेल
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ़
A pinch of asafoetida, हींग
1 large Onion, roughly sliced, प्याज
½ inch Ginger (peeled & chopped) अदरक
1 tsp Turmeric powder, हल्दी पाउडर
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
1 cup Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2 medium Potatoes, roughly sliced, आलू
2 tsp Jaggery (optional) गुड़
600 gms Guar beans (trim tip & tail, roughly chopped) ग्वार फलियाँ
1 ½ cups Water, पानी
1 large Tomato, roughly chopped, टमाटर
1-2 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
1 tsp Sugar, चीनी
1 tsp dry Mango powder, आमचूर पाउडर
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Sukhi Guar Ki Sabji
- In an iron kadai, add mustard oil, once it’s hot, add cumin seeds, fennel seeds and let it splutter well.
- Add onion, a pinch of asafoetida and saute for a minute.
- Add potatoes and cook it for 4-5 minutes on low flames until half cooked.
- Add guar beans, salt to taste, turmeric powder, degi red chili powder, coriander powder, ginger and saute it well.
- Cover it with a lid and let it cook for 7-8 minutes on low flames.
- Finish it with green chili, fresh coriander leaves, dry mango powder and give it a good mix.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
For Rasse Wale Guar Ki Sabji
- In a non-stick kadai, add mustard oil, once it’s hot, add cumin seeds, fennel seeds and let it splutter well.
- Add onion, ginger and saute for 2-3 minutes on medium flames.
- Add turmeric powder, degi red chili powder, coriander powder, curd, salt to taste and cook it for a while.
- Add potatoes, jaggery and let it cook until the potatoes are half cooked.
- Add guar beans, water, cover it with a lid and let it cook for 10-12 minutes on medium flames.
- Finish it with tomato, fresh coriander leaves, sugar, dry mango powder and give it a good mix.
- Transfer it to a serving dish and garnish it with coriander sprig.
- Serve hot with roti.
