Ingredients:
400 gms boneless chicken cubes
Ginger, Garlic,
Mint
Onion
Coriander
Green chilli Paste
Chopped curry leaves
1-2 tbsp butter
½ tbsp Turmeric powder
½ tbsp Garam Masala
½ cup yogurt
1-2 tbsp Lemon juice
3-4 tbsp rice flour
1-2 tbsp red chilli powder
1tbsp roasted cumin powder
Black pepper powder
Salt to taste
Oil for shallow frying

Marination:
Take a bowl, Add boneless chicken cubes Brush butter on it Add some Rice flour Add the paste of Ginger, Garlic, Mint, Onion, Coriander, Green chilli in it Add Turmeric powder, Garam Masala, Black pepper powder, Cumin powder, Chilli powder.. & Mix well Sprinkle chopped curry leaves Salt to taste Mix & coat the Chicken well, set aside for marination.. Marinate it.!
After Marination, Heat oil in a pan/kadhai & fry those Chicken cubes untill hot and crisp.. At last, Smoke the Chicken cubes.. All the aromatics in a pan.. add that final layer of flavour to the chicken that takes this dish to the NEXT LEVEL! Serve it hot with lemon wedges, raw onions, green chutney..
Special notes/Tips: The longer the chicken is marinated for, the better the flavours. Since the pieces of chicken are small, they cook quickly. So make sure that you don’t over-fry them Gently massage the marinade onto the chicken pieces The flour coating should be done just before frying to get that crispy layer Most of them add red food colour to get that bright red chicken. But as always, we like to keep it natural, so we used Kashmiri red chilli powder Don’t skimp on the curry leaves!
