Dates Sheer Khurma by Hima Gupta

7 cups of milk
100gm roasted vermicelli
Few strands saffron
2 tbsps Ghee
½ tsp green cardamom powder
1 cup ripe mango pulp
½ cup sugar
1 tbsp blanched mix nuts, finely chopped
5-6 pcs of boiled dates
A pinch of nutmeg powder
1. Boil milk until it reduces to three-fourth of its volume.
2. Heat some ghee in a pan, add vermicelli and stir gently.
3. Add reduced milk, mango pulp, dates and stir it well.
4. Finally, mix in all the remaining ingredients and stir well.
5. Garnish the dish with caramelized golden sugar. Serve chilled.
